ITALIAN MEAT SAUCE
1 (28 oz.) can Italian tomatoes with basil, crushed
1 (16 oz.) can tomato sauce
1 (8 oz.) can tomato sauce
1 (16 oz.) can tomato puree
1 (8 oz.) tomato paste
1 c. sliced mushrooms
1 lb. ground lean chuck
1 lg. clove garlic { chopped }
1/2 lg. green pepper (chopped)
1/2 onion (chopped)
1/2 tsp. oregano
1/2 tsp. crushed red pepper
--- salt to taste ---
Brown meat with onion and green pepper. Add rest of ingredients and simmer 2 hours.

ITALIAN MEAT SAUCE
1/2 lb. very lean ground beef
1 med. onion, chopped
2 lg. cloves garlic, crushed
1 sm. red pepper, seeded, chopped
1 sm. yellow pepper, seeded, chopped
2 (14 1/2 oz.) cans Italian tomatoes, chopped
4 heaping tbsp. tomato paste
3 tbsp. grated cheese
Salt and pepper to taste
1 tbsp. dried oregano
1 tbsp. dried basil
1/2 lb. quartered button mushrooms
1/2 c. dry red wine
1/2 c. chicken or beef stock
Dashes low-sodium soy sauce
Cook the beef and onion over medium heat. As the meat browns, break up any lumps with wood spoon. When the meat is almost browned, stir in the garlic and peppers. Continue to stir and cook until the meat is completely through and the onions are limp. Place the mixture in a colander over a bowl to drain away any fat. Return it to the frying pan.
Add the chopped tomatoes, tomato paste, Parmesan cheese, salt, pepper, and herbs. Cover the frying pan and simmer for 15 minutes.
Meanwhile, put the mushrooms, wine, stock, and soy sauce. (Can use 1 cup of stock instead of 1/2 cup wine.) In nonstick frying pan, stir to combine everything very well. Simmer, stirring occasionally, until the liquid is almost gone. Let the mushrooms "fry" gently in their own juices for a few moments. Add the mushrooms to the sauce.
Season the sauce to taste and simmer, partially covered, for 10 minutes more, until thick. The sauce may be refrigerated for a day or so, or frozen.

Simple Bolognese - Recipe courtesy Giada De Laurentiis
1/4 cup extra-virgin olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped
1 celery stalk, coarsely chopped
1 carrot, coarsely chopped
1 pound ground chuck beef
1 (28-ounce) can crushed tomatoes
1/4 cup flat-leaf Italian parsley, chiffonade
8 fresh basil leaves, chiffonade
Salt and freshly ground black pepper
1/4 cup freshly grated Pecorino Romano
In a 6 quart pot, add extra-virgin olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 8 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens, about 1/2 hour. Finish bolognese with Pecorino Romano. Check for seasoning.
Serve hot.
