To be safe, work with shortcuts.
First, find the program you want - let's say, Word.
cl Start
Programs
locate MS Word
right-click the icon for MS Word
look for create shortcut, then click it
if the shortcut goes to the bottom of the list, cut it and paste on the desktop.
Now, Alt-drag it to quicklaunch.

Don't overload quicklaunch unless you intend to move the slider and hide some of the icons. You won't have enough room to show tabs for open programs.

I always go to the Quicklaunch box, then go to All Programs, find the program I want to add and right click on the mouse. Some give me an option to Add to QuickLaunch, some don't.

finholl is correct. You can also drag and drop shortcuts to the quick-launch directory.

To be more specific you can right-click on the Quick Launch areas of your toolbar and click "Open folder". Then find an shortcut and copy/paste it into the QuickLaunch folder, or right click on an executable program, select copy, switch to the Quick Launch folder, and select Paste.

Right click on the icon and go to add to quick launch
You may need to expand the size of your quick launch bar. In that case, grab the little line of dots and drag them to the right.
