strawberry!! yumm. i love strawberry cheesecake!

i'm not a big fan of chcolate cheesecake.

heres some pictures that will keep your mouth watering.(and recipes.-

30 NILLA Wafers, finely crushed (about 1 cup)

3 Tbsp. butter or margarine, melted

2 Tbsp. sugar

1/3 cup strawberry jam

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

1/3 cup sugar

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

8 strawberries, halved

MIX wafer crumbs, butter and 2 Tbsp. sugar in small bowl with fork. Press firmly onto bottom of foil-lined 8-inch square pan. Carefully spread jam over crust.

BEAT cream cheese and 1/3 cup sugar in large bowl with wire whisk or electric mixer on medium speed until well blended. Gently stir in whipped topping; spoon over crust.

REFRIGERATE 3 hours or until set. Cut into 16 squares. Top each square with strawberry half. Store leftover dessert in refrigerator.

2 tblsp butter
125 g wholemeal biscuits, crushed
500 g cream cheese, softened
½ cup castor sugar
2 egg yolks
1 tsp grated lemon zest
2 tblsp lemon juice
2 egg whites, stiffly beaten

Topping
1 cup cream
1 tblsp sugar
1 tsp vanilla essence
1 tsp lemon juice
1 punnet strawberries

Prepare this cheesecake in the microwave:
Place the butter in a bowl and heat on High for 1 minute. Stir in the crushed wholemeal biscuits* and cook on High for 2 minutes. Press biscuit mixture into the base of a microwave-safe glass pie dish.

In a large bowl, beat the cream cheese, sugar, egg yolks, lemon zest and juice until creamy. Fold in the stiffly beaten egg whites with a metal spoon. Pour on top of the biscuit base and cook on Defrost for 20 minutes. Allow to cool, cover with plastic wrap and place in the refrigerator.

In a small bowl, beat the cream, lemon juice, sugar and vanilla essence until the sugar dissolves. Spread over the chilled cheesecake. Wash and dry the strawberries, cut in half and arrange around the edge of the cheesecake. Return to the refrigerator and cool for at least an hour before serving.

*Place a few biscuits at a time in a plastic bag and roll with a rolling pin to crush.

INGREDIENTS:

* 3 packages (1 and 1/2 lbs) cream cheese (room temperature)
* 4 eggs (preferably room temperature)
* 1 and 1/2 teaspoon (1/2 Tablespoon) vanilla
* 1 and 1/2 teaspoon (1/2 Tablespoon) lemon juice
* 1 and 1/3 cups worth of artificial sweetener (I like liquid concentrates for this recipe)
* 1/4 cup sour cream
* Crust:
* 1 cup almond meal
* 2 T melted butter
* 2T worth artificial sweetener

PREPARATION:
Heat oven to 375 F.

Tip: If you have bricks or a pizza stone or unglazed ceramic tile*, put them on the lower rack of the oven. This will hold the heat in the oven. This is good for cheesecakes not baked in a water bath.

oh my goodness.... I am 7 months pregnant and now you have got me wanting both... I wonder if they make a strawberry chocolate.... yummy
