There are hundreds of small differences Tina. The engine bore centers were increased from 4.4 inches to 4.5 inches (making the block slightly longer) This was done to increase the flow of water between the bores for better cooling and to move the head holding studs farther away from the cylinder bore to stop bore distortion when the heads are torqued down. The cam tunnel was raised and made a larger diameter to make the push rods shorter and the camshaft diameter larger. This also was done to make room for piston bottom oilers.
The block and heads were redesigned to allow proper coolant flow without the external coolant lines needed with the original chevrolet (1955) design. The heads were designed with internal oil passages for high flow spring oiling and efficient oil return. The block is setup for a camshaft driven remote fuel pump instead of the block mounted pump that was prone to break and cause fires when the right front was wrecked.
The cylinder heads have symetrical ports rather than the mirrored ports of the sb2.2. This allows for better cooling around the exhaust ports and valves. The intake port offset was reduced to place the intake valve in a better position within the bore.
To sum up, the changes will allow more power after some development time. Safety is increased by the fuel, water and oil line reduction and position. Reliability is increased thru better cooling efficiency which will also result in more fuel efficiency. Let me know if you have more questions.

Oh my.....A lot!
1. A dry intake (separated from the oil by a valley plate). This results in a cooler (more dense) air/fuel charge = more power.
2. The cam is higher in the block on the R07 so the pushrods are shorter. This would cause a more stable valvetrain.
3. 6 bolt head design instead of the old 5 bolt.
4. The distance between cylinder bores has been increased by .100" which should provide more uniform cooling.
5. Pretty much eliminated exterior oil lines.
6. The exhaust ports are bigger on the R07.
7. The valve location is identical on each cylinder on the R07. The R07's valve location more resembles the LS1/LS2/LS6/LS7 more than the SB2 head.
8. The cam tunnel is enclosed to separated it from the crankcase. This results in less windage loss from oil falling back to the pan and hitting the cam.
The R07 is a purpose built race engine. There are plenty more differences, but you get the idea. It is an engine that's capable of massaging much more power out of than the SB2. Of course anything can be pushed too far though.
