There's a kind of two-sided metal frame that should be used to grill fish.
Imagine barbeque tongs with a rectangular grates on the ends. The fish is clamped between the grates, then laid on the grill.
That way you can flip it without it sticking to the grill or falling apart.
As for tilapia, all it really needs is some salt. When the grill marks are visible on one side, flip it.
It'll cook VERY fast. Probably less than 3 minutes on a hot cooker.

I just did a half pound tilapia fillet for 3 minutes. Flipped it after two minutes. Brush it with olive oil, both sides when you put it on. It won't come apart. The Foreman sears the outsides and that keeps it from sticking. The people telling you to put it in foil or in a metal cage have never cooked one on a Foreman before. Don't listen to them. Mine was very flaky and juicy. Six minutes would have ruined it, as one person suggested. It doesn't take long when you're cooking it on both sides at the same time.

Ain't nothing magical about that appliance. If your fish pan-fries well, it will cook nicely on a George Foreman Grill.
Tilapia tastes good, all by itself. I'd lightly season it with lemon-pepper and salt, and nothing else.
As a rule, low and slow *always* produces food that tastes better. Some people call it "carmelization" but technically, that's wrong in most cases; it's really the Maillard Reaction.

It will cook well on the forman. But I would suggest dipping your fish in egg and then use some breading. Spray your forman with non cook spray (canola oil), that way it'll brown up really nice. For breading I usually use equal parts italian bread crumbs and flour, some seasoned salt and a bit of pepper. The egg and breading will help hold the fish together, and it will make it nice and crispy.
Oh sorry.... also cook it at about 325 for 6-7 mins. When your fish flakes apart, its ready to eat. :)

i have a george foreman grill, and tilapia comes out perfectly on it, as does every other kind of fish. there is no set cook time, just keep an eye on it. try lemon pepper or celery salt. keep flipping every five minutes until it starts to flake.

Montreal grilled Tilapia:
rub oil on fish and sprinkle with montreal steak seasoning
grill 3 at a time for 6 minutes on dat old G.F. grill.
serve on boston bibb with lemon wedges and macaroni salad
