Meat Pie/Pasties
1LB ground beef, whatevers on sale, the leaner the meat the drier the pie.
1 small onion chopped
1 clove minced garlic
3-4 carrots peeled and chopped
3-4 potatoes peeled and chopped
salt and pepper to taste
2 Tbls margarine or butter
Pastry dough (you can make it homemade or pick it up on sale. I've gotton it for as little as $1 and freeze a bunch, it can be found by the biscuits at the supermarket)
In a large bowl mix all ingredients with your hands. Lay one pastry dough on bottom of a 9 inch pie plate, add mixture and press down firmly. Dot top with butter or margarine, cover with second pastry dough and seal edges. Slit top of pie crust. I usually put tin foil around the edge because they tend to get darker then the rest of the pie. Bake 1 to 1 1/2 hours or until veggies are fork tender. I check this by sticking a knife into the slit I made and checking the carrots and potatoes. Pull it out and let it rest 10 minutes before serving. Sometimes I make a salad but since you have your veggies, meat and carbs all in one dish (and it's quite filling) we just eat it alone. We always have leftovers of this one which are great the next day.

You could make chili.
1 - 14.5 oz can red kidney beans - $1.00
1 - 14.5 oz can tomato sauce - $1.29
1 - white onion diced - $0.74
1 lb ground beef - $4.99
1 packet chili seasons (like lawry's) - $1.99
Rice - not sure how much, since I buy big 5 pound bag.
Directions - dice the onion and put in a large heavy bottom pot, over medium high heat, brown the beef and cook the onion until the beef is no longer pink and onion is slightly translucent. Add the kidney beans (do not drain), tomato sauce, chili seasons and simmer for 20 - 30 minutes. Add water if it is too thick. Serve with steamed white rice.
Total meal for four, not including the rice is $10.01 for four servings. So approximately $2.50 per person.

Sloppy Joe's are yummy. Also, swedish meatballs are really good.
I also make hamburger stroganoff with cream of mushroom soup and sour cream.
Tator tot casserole:
gound beef
onion
cream of mushroom soup
sour cream (if you want)
frozen mixed vegies
1 can milk
tator tots
Heat oven to 350
saute hamburger and onion
mix with cream of mushroom, milk. I also add green beans, sour cream, mushrooms and whatever else sounds good. put in 9x13 pan. Cover wtih frozen mixed vegies and then top with mashed potatoes or tator tots. Bake about 30 minutes, until bubbly.
I also saute hamburger with onion, add mushrooms, frozen mixed vegies and what ever other vegies I like, add a couple jars of beef gravy, put in 9x13 pan and cover with mashed potatoes. It's really yummy. Bake for about 30 minutes, 350 degrees.

Chopped beef steak aka Hamburger steak
Form thicker & elongated patties. Cook through.
Brown gravy. Water, beef stock, a little corn starch. Cook until thick. (Mix corn starch with ice cold water, and stir it into boiling water/stock.)
Sautee mushrooms, onions, or both. Gravy over the hamburger, mushrooms/onions on top.
It isn't fancy, but it is cheap and filling.
