That sounds like it would make sense. That is not what the mean by Fundamental though. What the fundies mean by fundamental is "a sola scriptura". By the book alone.
They sure seem to do a lot of picking and choosing over what parts of the book they actually read though.

2nd answer was accurate in the essentials. The whole idea of "fundamentalism" is that additional (post-biblical) doctrines are dependent upon the doctrines specifically defined by scripture.
Of course, one can argue that all Roman Catholic doctrine is supported by scripture. However, it should also be obvious that this requires a specific interpretation of scripture, and other interpretations result in contrary doctrines. (For example, the doctrine of Immaculate Conception)
Some sects (Church of Christ, for example) teach that nothing religious that is not specifically represented in scripture is permitted in religion. For example - they allow no musical instruments during church service because no example of this is given in the New Testament. This is a very restrictive form of "fundamentalism".
Other sects go the other way, and basically say that anything *not* opposed by scripture is OK. This is, in general, also the tack taken by the Roman Catholic Church (IMHO). In general, I have to say that I agree with this *tack*. Anything that is not sin is permissible.

"why is that person not a Catholic from where the fundamental values originated?
Well you see, that's the major debate between Catholics and Protestants. Protestant fundamentalists say that the Bible is the place where a person finds the values of the Faith and that the church in Rome has perverted that process in a manner similar to the Pharisees of Jesus' day who added to God's Word with their man made traditions.
Consider the Catholic rule that says that Priests can't have a wife for instance. That rule didn't start coming to pass until around 800 AD and it flies in the face of what the Bible clearly teaches regarding people who have positions of authority in a congregation.
1 Timothy 3:1 Faithful is this word: If anyone aspires to the position of a bishop, he desires a good work. 2 It is necessary, therefore, for a bishop to be irreproachable, the husband of one wife, temperate, sober-minded, well-behaved, hospitable, skillful at teaching; 3 not given to wine, not a bully, not greedy for money, but gentle, not quarrelsome, not loving money; 4 one ruling his own house well, having his children in submission with all reverence; 5 (for if one does not know how to rule his own house, how will he take care of the church of God?);
1 Timothy 3:12 Let deacons be the husbands of one wife, ruling their children well, and their own houses.
Mark 7:1 Then the Pharisees and some of the scribes gathered together to Him, having come from Jerusalem. 2 Now when they saw some of His disciples eat bread with ceremonially unclean, that is, with unwashed hands, they found fault. 3 For the Pharisees and all the Jews do not eat unless they wash their hands with their fist, holding the tradition of the elders. 4 And coming from the marketplace, unless they bathe, they do not eat. And there are many other things which they have received by tradition, like the washing of cups and pitchers, copper vessels and couches.
5 Then the Pharisees and scribes asked Him, "Why do Your disciples not walk according to the tradition of the elders, but they eat bread with unwashed hands?"
6 And answering He said to them, "Well did Isaiah prophesy about you hypocrites, as it is written: 'This people honors Me with their lips, but their heart is far from Me. 7 And in vain they worship Me, teaching as doctrines the commandments of men.' 8 "For having left the commandment of God, you hold to the tradition of men--the washing of pitchers and cups, and many other similar things you do."
9 And He said to them, "Well do you set aside the commandment of God, so that you may keep your tradition. 10 For Moses said, 'Honor your father and your mother'; and, 'Whoever speaks evil of father or mother, let him surely die.' 11 But you say, 'If a man says to his father or to his mother, "Whatever you might be profited by me is Corban"--' (that is, a gift), 12 then you no longer allow him to do anything for his father or for his mother, 13 thus nullifying the word of God by your tradition which you have handed down. And many similar things you do."
