The Ultimate Cheese Course

Soft goat cheese
Aged goat cheese
Teleme
Camembert
Gorgonzola
Parmigiano-Reggiano
1 loaf walnut bread or other dark, dense bread

Cheese Plate tips:
Lavender Honey drizzled over pungent Stilton or creamy Point Reyes Blue Cheese is surprisingly well-matched.
The crumbly sweetness of biscotti with big cheeses and red wine is a wonderful flavor combination.

Serve candied almonds or other candied nuts for an accompaniment with a sweet, salty crunch.

The most elegant thing you can serve with a cheese course is a bowl full of warm pistachios...to occupy hand and mouth while you're sitting around the table talking with friends and finishing that great bottle of red wine.

If serving Parmigiano-Reggiano, drizzle with a couple of drops of aged balsamic vinegar to enhance the flavor.

Set out and arrange cheeses 1 hour before serving, cheeses are best consumed at room temperature.

Serve cheeses on a round tray or wheel, arranging clockwise from 6:00 from the sweetest to the strongest cheeses.

Serve sweeter accompaniments, such as figs with the stronger cheeses to get some agre dolce flavor.

Serve stronger cheeses with lemon and orange wedges to enhance the flavors.

Wine Pairings:
As a general rule, the cheeses you choose should follow the flavors and intensity of the wine. If you are drinking a big, intense wine, choose a big, intense cheese. For example, if you've chosen Petit Sirah (usually big, deep--colored and full bodied), choose a Gorgonzola, the creamy, classic Italian cow's milk blue cheese that comes in Mountain (aged) and Dolce (sweet) varieties.

If you are serving a Sauvignon Blanc (which tends to be crisp and light - medium bodied), pair it with goat cheese, light and delightfully tart--even tangy. Also, the more acidic your wine is, the higher the fat content of the cheese needs to be (generally).

A young, fresh goat cheese, goes well with Robert Mondavi Winery Fume Blanc Reserve or the Luna Pinot Grigio. Or try, St. Paulin (also known as Port Salut), good company for fruit and light wine.

Buy a well-aged Brie, Camembert or Cambozola for Chardonnay. This wine has the acid to take the creamier, "fatty" cheeses.

For Reggiano and Blue cheeses try my Old Vine Petit Sirah Zinfandel.

Of course, contrasting flavors can also guide you toward great cheese course combinations, so from time to time I like to serve a crisp, fruity sparkling wine with Reggiano! What contrast for the mouth!

With numerous varieties to choose from, cheese's companionship with both sweet and savory ingredients can make serving the ultimate cheese course a creative and colorful celebration every time. Have fun and experiment with your favorite flavors!

With cheese and wine, I like to add sweetness and texture and present them together on a memorable serving platter.

Fresh Vegetable Platter with Olive Oil Dip
Pinzimonio

Pinzimonio means "combination," and the dish consists of an assortment of the freshest vegetables available and some good-quality olive oil.

An arrangement of crisp carrots, radishes and spring onions would be wonderful, as would tender young artichokes and fragrant bulbs of fennel.
Most of the vegetables are served raw, but some things, like string beans, are better blanched, and certain root vegetables, such as beets and potatoes, should be cooked thoroughly.
The prosciutto and bread in this recipe are not traditional, but they add lots of flavor and substance.
Quantities are left up to you; they will depend on the number of different vegetables served and the number of guests at the table.

Ingredients:
Assorted cut-up vegetables (such as carrots, cucumbers, red bell peppers, yellow bell peppers, cherry tomatoes, fennel bulbs, green onions and radishes)
Extra-virgin olive oil
Sea salt
Crusty Italian bread
Paper-thin prosciutto slices

Preparation:
Arrange vegetables on platter. Allow guests to drizzle oil onto their plates and season oil to taste with salt. Serve olive oil with vegetables, bread and prosciutto.

hope they help. enjoy.

Put a bunch of chicken wings in a pan, and cover halfway with a mix equal amounts of soy sauce & water, bake at 450 for 40 minutes.

In a crockpot, melt equal amounts of velveeta and canned chili with no beans for a great nacho dip. Serve with tortilla chips.

In a crockpot, melt equal amounts of grape jelly & bottled chili sauce with a couple packages of little smokies. (This sounds awful, but is really yummy--never any left!)

On flour tortillas, spread soft cream cheese flavored with onion & chive all the way to edges. Place very thin slices of hard salami over it, then roll up tight, wrap in plastic & chill 2 hours. Unwrap & slice 1 inch thick & arrange on a platter cut side up.

AND---make a cheese & sausage tray, or a veggie tray with dill dip, some chips with dip or salsa, and something sweet--like cookies or candy.

heres a few ideas

This is a great time to make punch

Pretty Pink Party Punch
15 min 15 min prep

8 cups prepared sweetened pink lemonade (I just use frozen mixed with water as directed)
4 cups carbonated lemon-lime beverage
2 quarts raspberry sherbet
lemons or orange slices (to garnish

In a large glass punch bowl, mix the lemonade and lemon-lime soda.
Add in half of the sherbet, and stir well to make frothy.
Add in small scoops of the remaining well-frozen little sherbet balls.
And the lemon and/or orange slices (if using).
Serve immediately.
NOTE: just a hint, prepare and freeze your sherbet balls very well in the freezer a head of time so they will remain hard in the punch, and not melt as fast, I do this days ahead, and place them in a large plastic freezer container until ready to drop into the punch.
Also make certain that your lemonade and soda are VERY cold, so you do not have to add any ice to the punch when serving, although of coarse ice may be aded if desired.
DELICIOUS!

Green Chutney Sandwich
20 min 10 min prep

4 slices bread
2 teaspoons green chutney
2 slices tomatoes
4 slices beetroots
4 slices cucumbers
2 slices onions
2 slices of boiled potatoes
1 teaspoon ketchup
1/2 teaspoon chat masala
2 slices cheese
1/2-1 teaspoon butter, spreadable

Apply butter on all the four slices, one surface each.
Apply the chutney on two slices on top of the butter.
Arrange the sliced vegetables.
Put the ketchup on top.
Sprinkle the chat masala.
Close the sandwiches with the buttered sides of the other two slices down.
** I only apply butter if I want to keep the sandwiches for a little while so that they do not get soggy. Otherwise, as you can see, its a pretty healthy sandwich.

If you're like most Americans trying to eat healthy by meeting your daily requirements, you probably have a variety of fresh fruits on hand. Just use whatever you have available to make this fruit salad recipe.

Here are some examples of some fresh fruits that you should include in your fruit salad.

Strawberries
Watermelon
Grapes
Peaches
Kiwi
Bananas
Pears
Berries
Cantaloupe
Mango
Apples
Oranges
etc…
Combined fruit in a large bowl and gently toss. Add lemon lime and pineapple juice to fruit. Once again gently toss to coat. Chill in the refrigerator and serve cold.
