Just an annoyance thats been irritating me today.... But I actually want to know!!

Because the pan is still warming up when you place the batter for the first pancake on and you expect it to take less time than it has to, screwing it up. Just let it sit for a little while longer and don't rely on how long you Think it will take, but go by the color on the cooking side. It should be golden brown. Don't flip before that, no matter how much you want to. Hope this helps!!

When you are cooking you might not be testing it first. To test it wait till you know the oil and pan is hot then take the spoon and put just a dot of the batter in and if it turns brown not too long after then you can put the rest of the small batches in. Cast iron is a good type of pan to use as well and you also have to make sure to pay attention to the pancakes when cooking them.

You have said the truth!!! Recently, I took out a second mortgage and bought a Swiss Diamond fry pan (11 1/2 inches) and now the first one is just as good as the last one once you get the pan to the right temperature (and you probably know what that point is on your stove; I have a gas stove.) Otherwise I think that the coolness of that first batch of batter helps to equalize the heat of your pan evenly and once the heat is even the pancakes come out good.

Yeah, I think its just because of the temperature of the pan.

Its usually not hot enough when you start, so the first side takes a while to cook enough. Sometimes you flip it over too early, and it goes kind of messy.

Or, although it starts being not hot enough, it then heats up so its a bit too hot, and the second side of the first one burns. After the first one, you would probably normally turn the heat down a bit, and then after that they are fine!

I agree I think it because the pan is not hot enough. I have tried waiting a bit longer to start cooking and that seems to help

You have to let the pan get really hot, and only flip it when there are little bubbles all over it.
