I like using a variety of beans and meat.

1/2 lb ground beef
1/2 lb ground turkey
1/2-1 lb stew meat
1 onion, chopped
2 garlic cloves, minced
1 can pinto beans or chili beans, the whole can on all the beans
1 can kidney beans
1 can white beans
1 can black beans
1 can refried beans w/ lime or regular
1 large can crushed or chopped tomatoes
1-2 tablespoons chili powder
1-2 teaspoon cumin
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano

Brown meat, add onion and garlic, add all the other ingredients and simmer 1 hour or in crock pot on low all day.

Brown & drain 2 lbs. lean ground meat & one chopped onion, add 1 15 oz. can tomato sauce, 1 medium or large can Ranch Stlyle beans, 1 can (undrained) Rotel tomatoes with green chilies & 1 12-15 oz. can Campbell's tomato juice. Simmer for about 20 minutes & serve with Fritos & grated cheddar. I promise it will be a hit! You can add salt if you wish but it really doesn't even any other seasoning other than that. Definitely quick & easy!

I use one pound of frozen ground turkey in the roll. Brown it like hamburger adding a cup of water to speed up the cooking process. Then add three 15oz cans of chili beans in sauce. Then one 15oz can of dark kidney beans drained. One can of diced tomatoes with the onions in it. One package of chili seasoning. Cook until tomatoes soften. Quick and easy.

1 teaspoon dried oregano
5 cups chicken broth
2 (15 ounce) cans cannellini beans
1 (4 ounce) can diced green chiles
1/4 cup cornmeal (optional)
salt and pepper to taste
1/4 teaspoon hot pepper sauce

--------------------------------------...

DIRECTIONS:
In a large stock pot, saute chicken, olive oil, onion, garlic, red bell pepper and yellow bell pepper, until vegetables start to soften.
Add chili powder, cumin and oregano. Cook on medium for 3 minutes. Add chicken broth, beans and green chilies and continue to cook on medium low for 5 to 10 minutes.
If you want to thicken soup, mix cornmeal with a little water to form a paste and add to chili. Season with salt, pepper and hot sauce and serve.

If you are or would prefer a vegetarian chili, may I recommend,

If you would prefer one with meat, then try

Both are magnificent and while both are cooked in a crockpot, they can certainly be adapted to a dutch oven or other large pot.

Yum!
