For non-vegetarians:
Chicken Marsala (see recipe below); serve with fresh green beans, steamed then sauted in butter, garlic and balsalmic vinegar; and angel hair pasta tossed with artichoke heart, sun dried tomatoes, feta, parmesean, mushrooms and garlic.
To drink: a good red wine, I recommend a Zin or a Cab.
For dessert: Tiramisu (see recipe).
And yes, I don't think there isn't a woman alive who wouldn't like this kind of treatment.

I am a former chef and while never having been married or involved, my best sugesstion is to find out what you partner like in all the catagories you listed, the worst thing to happen is to go to all the trouble of producing a intimate romantic meal only to find out she is not well that day, having other issues, does not like certain foods or has had a large meal at lunch and not hungry.
A surprise is fine but leftovers are not, ask the one you cooking for her favorite foods and beverages and work around that, it is alot more romantic if they are happy at the end of the meal instead of hungry or angry.
Even if it means buying some of the things, of course the beverages, but concentrate on one thing, cost can be a factor to, if she wants an expensive wine, then a nice plain meal and dessert may be an option, and if the meal itself is complicated try to make the rest as easy as possible.
I worked to many hours, travelled the world and had a no date the one's you work policy, that is why I am in the situation I am in, plus I look like a gorilla, that did not help!!!

Yes, love romantic candlelight dinners.
Try making some kind of fish dinner, like grilled or blackened salmon and sparagus with olive oil and garlic..easy on the garlic if its going to be one of those dates (or grilled mixed veggies) and mashed potatoes, glass of white wine and water on the side.
As for dessert, apple pie or pumpkin pie..since it is fall time.

A nice meal could consist of anything you took the time to prepare for her, though wine and chocolate are always a plus.

One of my favorite romantic dishes to prepare is this: Seared Salmon Fillets with Pomegranate Sherry Glaze. Not only is it beautiful, it is delicious. Pomegranates always add romance to everything. And don't forget the wine.

fish is generally considered an aphrodisiac (why i dont know cause fish doesnt turn me on but meh.) try finger foods, sounds cheesy but feeding each other is always sexy. theres a number of ideas at this website http://www.kitchenproject.com/html/romance.html good luck!
