Their theories are mostly right but their prescriptions may be toxic. You can trust their home remedies but if someone tries to sell you some ayurvedic preparation, be on your guard and consult your doc first. What's packed inside may not be what's written outside

There is nothing like Ayurvedic Diet(recipies) in classical texts -Brahu/Lahu Trayee-Charaka,Sushrutha,Vagbhata,
Madhava,Sarangadhara.What is described is out of six tastes Madhu(sweet),Aamla(sour), Lavana(salt),Katu(Pungent),Thiktha(astringent),Kashaayam(bitter)--in the taste bud they will give a taste(Rasam) and after digestion their taste will differ{(as in modern science Peptones are very bitter compared to Protein(Caesin)} madhu (sweet-sucrose) may become Amla(Sour-Citric/ Succinic/ Malic/ Fumaric acids),-this is known as Vipaakam--Prabhaavam means Bio-feed back--The Prakopam(Vitiation) of a Dosha(a catabolite) is responsible for Clinical manifestation of a disease--sometimes sub-clinical symtoms also may be there.Accordingly a diet should be prescribed to Ameolirate that Dosha.In Ayurveda,Diet forms an important role in Prevention and control or cure of a disease.Just as drug -drug interactions in Allopathy(Modern medicine) in Ayurveda it is presumed that the chemical units of Diet(6 proximate principles and other micro chemicals and the chemical units of herbal medicines like Alkaloids, anthocyanins, lycopenes, phytosteroids,terpenes,flavanoids are anticipated to interact and produce favourable or detrimental effects.By emperical knowledge (by experience and textual informations,Ayurvedic Physians prescribe Diet.But inexperienced-upstarts have written "Books?!!!" on Ayurvedic diets-what they mean is vegetarian Diets(It is a blatant FRAUD.Ayurveda is NOT "VEGANISM"--there are many terrestial and sea animal products in Ayurvedic medicines--ssrvj-Assistant Director(Retired) ,Central Council for Research in Ayurveda,Ministry of Health,Government of india.
