Could someone please tell me what kind of pork to use for pulled pork sandwiches?

Use the shoulder...it has a high fat content, and when you slow roast it, the fat melts and flavors the meat. It will pull apart very easily and taste like heaven, if heaven were pork. ; )

a pork loin, for leaner pork

or a pork butt, but you'll have to pull out chucks of meat from amongst the fat. Will be moister, though

A pork roast would probably be the best. If you slow roast it, it will fall apart easily.

Picnic,Shoulder, or Boston Butt . Butt is easiest being boneless and skinless, Picnic is probably best tasting albeit lots of fat, and a bone in it Shoulder is also mighty fine for same reasons. Low and slow is the name of the game..

Use a boston butt. It taste great.
