Less heat and more time simmering. More water in the mix or milk.

The way I cook my oatmeal isn't in a pot. I like to make a bowl at a time so here's how I do it. I place water in my bowl to 3/4ths full. Zap it in the microwave until it starts to boil. Remove and add raisins. Put it back in until the boil starts again. Remove and add the Old Fashioned Oatmeal until it's just at the water line. Zap again until the center starts to mound up like a volcano. Remove from the microwave, stir, cover and let sit for 5 minutes. Enjoy! It turns out perfect every time. I don't like pasty oatmeal - I like to feel the pieces so this works perfectly for me.

Keep stirring! Or you could try a non-stick pot and lower the heat a little as mentioned. Oatmeal is like glue, it sticks to everything. You could probably build a house with it. : )

The water cooks out and you're left with fiber/starch and other oatmeal goo. Keep stirring it while you cook, and keep the temp down.

Soak it in nice warm soapy water as soon as you empty the pan and it'll wash right off.
