My all-time favorite sandwich:

A home-made grilled cheese sandwich

Why?
Many, many memories of good times ending with a grilled cheese sandwich before bed;
The time i got my tonsils out and couldn't eat anything but liquids for 2 weeks and the first real food I had was my mom's grilled cheese sandwich.
Seeing my daughter's face when I made her first grilled cheese sandwich and she loved it.
The comfort I get from making it, sharing it, and eating it.
Simple, yet great!

The patty melt or the reuben are masterpieces of concepts that should not work, but which do brilliantly. --The burger on regular bread vs. a bun, and a pile of kraut and 1000 island (yuck) on a sandwich.

To me, both these sandwiches are triumphs of perverse thinking.
