Low Fat Creamy Italian Salad Dressing

Here's a lower fat version of the classic salad dressing. After mixing, you can cover and keep this dressing refrigerated for three to four days.



1 C low fat sour cream
2 T red or white wine vinegar
2 T dry white wine
2 cloves garlic
3 tsp. Italian seasoning
1 T Dijon mustard
1 T honey
1 T grated Parmesan cheese
1 T olive oil
1/2 tsp. black pepper








Makes about 1 1/4 Cup

In a blender or food processor, process all ingredients except sour cream until completely mixed. Add sour cream and process just until mixed.

•1-1/2 cups fat-free plain yogurt
•3/4 cup chili sauce
•1 tablespoon prepared horseradish
•1 tablespoon steak sauce
•1-1/2 teaspoons Worcestershire sauce
•1/2 teaspoon garlic powder
DIRECTIONS
1.In a small bowl, whisk all of the ingredients. Chill for at least 30 minutes before serving.
Editor's Note: This recipe was tested with Heinz 57 steak sauce.
Serves 18
Nutritional Analysis: 2 tablespoons equals 20 calories, trace fat (0 saturated fat), trace cholesterol, 187 mg sodium, 5 g carbohydrate, trace fiber, 1 g protein.

1/3 c. olive oil
2/3 c. white vinegar
3-4 cloves of garlic quartered
1/4 tsp. dried mustard, salt, pepper, lemon pepper, Italian Seasoning (or whatever dry herbs you have on hand).
All the seasonings are really to your own personal taste. Let stand for a couple hours at room temp. Have a taste and adjust seasoning. This is really nice on a spinach salad as well as a lettuce salad.

French Dressing Recipe

1/3 c. cooked brown rice
1 c. + 2 tbsp. tomato puree
1/4 c. tahini
6 tbsp. honey
1 1/2 tbsp. paprika
1/2 c. lemon juice (fresh is best)
1/4 tsp. garlic powder
1 1/2 tsp. onion powder
1 1/2 tsp. salt
3/4 c. water


BLEND all ingredients. Keeps well in refrigerator for about 1 week. May need a little
more water before serving. Makes 3 cups

Poppy seed dressing # 1(good with Spinach)
2 Tab orange juice
1 Tab honey
1 Tab red wine vinegar
1 Tab Dijon mustard
1 tsp poppy seeds
dash salt and pepper
2 Tab flax oil (or olive oil)

1/2 cup plain yogurt
1 -2 Tab honey or maple syrup
1 tsp poppy seeds

Poppy seed dressing # 3
1 tsp Orange rind, finely grated
1/4 cup orange juice
1 Tab each, honey and vinegar
1 tab Dijon mustard
1/2 tsp poppy seeds
1/4 tsp salt
1/4 tsp pepper

Low-fat caesar dressing:
1 1/2 Tab low-fat or fat-free mayonnaise
1 crushed clove garlic
1/2 tab lemon juice (more or less to taste)
dash Worcestershire sauce
dash mustard
1 Tab parmesan cheese
2 Tab olive oil

LOW CALORIE SALAD DRESSING

1 (7 oz.) pkg. dry ranch style salad dressing mix
1 c. buttermilk
1 c. plain low fat yogurt

Mix ingredients until smooth to creamy. Refrigerate several hours before serving. 10 calories per tablespoon.




FREE" SALAD DRESSING

3 c. tomato juice
1 1/2 tbsp. prepared mustard
1/2 c. plus 2 tbsp. lemon juice
6 tbsp. minced onion
1 tbsp. minced garlic
1 tsp. each dried chives, parsley and celery flakes
Artificial sweetener to equal 12 teaspoons sugar

Mix all ingredients together in quart jar and refrigerate. Shake well before using. Makes 1 quart.
Calories: 1 tablespoon = 4 calories. Fat Controlled Diet: Negligible fat. Diabetic and Calorie Controlled Diet: 1 tablespoon = free choice. Sodium Controlled Diet: 1 tablespoon = 28 milligrams sodium. Prepared as directed, using low sodium tomato juice and low sodium mustard, 1 tablespoon = negligible sodium.

basic vinigrette, not fancy but really quick and easy:

some mustard, salt and pepper in a mixing bowl. add a splash of vinegar, any will do but perhaps white wine or cider vinegar. Then whisk in olive oil until it emulsifies. Generally speaking about 1 part vinegar to 4 parts oil

2 cloves chopped garlic
1/2 cup balsamic vinegar
1 cup extra virgin olive oil
juice of 1 lemon
kosher salt
fresh ground pepper

Mix garlic,salt,pepper, vinegar and lemon juice together. Slowly whisk in olive oil. If you don't like balsamic vinegar, just use more lemon juice in place of the vinegar. Enjoy!
