having found this alternative to rice thats lower in caleries and better in fibre and many other goodies i've run out of ideasto try.

BROCCOLI TOFU PIE

1-1 1/2 lbs. chopped broccoli
4-5 tbsp. oil
3/4 c. chopped onion
3 tbsp. flour
1 c. stock or water
3/4 lb. tofu, drained, mashed
1 c. grated cheese
1/2 c. sunflower seeds
1/2 c. wheat germ
1/4 c. sesame seeds
Rice or bulgar wheat

Steam broccoli. Saute onion in oil until golden. Add flour, stir one minute until blended. Stir in stock and cook until thick and bubbly. Mix in tofu, cheese, sunflower seeds and broccoli. Pour into 2 quart casserole. Sprinkle Parmesan, wheat germ and sesame seeds. Dot with butter. Bake at 350 degrees for 30 minutes. Serve with rice or bulgar.

Orange and bulgar wheat cake

Serves 4



Preparation time less than 30 mins

Cooking time 10 to 30 mins







Ingredients
55g/2oz bulgar wheat
55g/2oz butter
55g/2oz self-raising flour
1 egg
splash of milk
55g/2oz caster sugar
1 lime, juice only
handful of mint leaves
55g/2oz caster sugar
1 orange, peeled and sliced
drizzle of cream
icing sugar, to dust



Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Place the bulgar wheat, butter, flour, egg, milk, sugar, lime juice and mint into a food processor and blend together to make a batter.
3. Meanwhile, gently heat the sugar in a pan to caramelise and then add the orange slices.
4. Pour the batter on top of the caramelised oranges and then bake in the oven for 10-15 minutes or until golden and risen.
5. Remove from the oven and turn out onto a serving plate. Drizzle with cream and dust with icing sugar to serve.

When my hubby was on a low-fat/low-cholesterol diet and was limited to 2-3 oz of meat a day, I would add the bulgar to boiling water to swell and then use it with the 4 oz of hamburger to make a Sloppy Joe. He felt he was getting lots of meat when he wasn't.
