Maybe she's just tired of ending up sleeping in the wet spot on the sheets afterwards and if she has you climax on her stomach there is less mess on the sheets?
Is she using "pulling out" as birth control so would rather have you climax on her than in her so there is less chance of pregnancy?
Maybe it just turns her on.
Who knows- as long as it's not hurting anyone or offensive why worry. I've heard of much stranger requests.

Get a grip, many women enjoy seeing a male climax, it is no big deal and if it enhances her pleasure what do you care. Heck a woman will climax on you with no problem. Try it, if you are truly repulsed then explain to her, but I would indulge her fantasy, you can always climax again in a place of your choice.
