Keep in mind that the plastic used for water does not have an indefinite life. Especially when exposed to sunlight. It is mainly a liability thing. The seal can lose integrity from repeated warming and cooling. They are protecting themselves from lawsuits.

Edit. For those afraid of dioxin from vinyl plastic. I have never seen bottled water in vinyl. Also PVC is used widely in plumbing and has been for years. The types that you are concerned about are not used commercially for consumeables.

bottled water particularly those that are in plastic bottles are usually given expiration dates because of their susceptibility to certain factors. these packaging materials can only prevent migration of microorganisms to a limited extent. also, not all plastics are impermeable to gases. likewise, those bottled using PVC material has been shown to release dioxins, known carcinogens in the food stuff, and in this case, the water in the bottle.

I dunno but i hav a feeling when its gone bad, if it sits in a plastic bottle or somtin in the sun too long, the plastic melts into the water and it ends up tasting like plastic juice.
