It means she needs a caffeine fix and wants to know if you would like to tag along. A lovely chat at a table might ensue. If she's good lookin' go for it. Make sure to foot the bill without asking, and listen to her when she talks.
If you're not interested, go anyway just for the coffee. It's a gentleman-y thing to do.

If I were to ask a guy this, it would probably be because I really like him, but am not sure how he feels about me, so dinner would be too "date-like", and lunch would be more "just friends". Going out for coffee is perfect, becuase there's not much pressure. Maybe i'm just weird though.
