First of all the bride is NOT supposed to assign the bridal shower to someone! A good friend is supposed to offer (usually the maid of honor) You do not have to do this and a stripper is totally out of line for a bridal shower. That is something always in bad taste and if you insist needs to be done at her bachelorette party.

The shower should be arranged by the Maid of Honor and the bridesmaids, with input from the bride's female family members. You shouldn't be in charge of it all, but since you already agreed, you'll have to make the best of it. You need to plan a party that the BRIDE will enjoy - and that means having all her guests be happy as well. So do something that everyone can enjoy, even if it isn't your idea of the greatest, funnest party in the world.
A potluck is fine - just put on the invitations that the party will be pot luck, and if you can, write on each invitation what sort of dish that person should bring (entree, side dish, or dessert). When people RSVP you can ask them what they plan on bringing, to make sure you have enough.

There is so much wrong with this, it's hard to know where to start.
First of all, the bride doesn't get to "request" anything. You didn't volunteer to throw her a shower? Then you're not hosting one.
Secondly, a stripper, really? Were you raised in a trailer park?
And lastly, you want to invite people to bring the bride gifts and you'll expect them to cater the event too? Again, how classless are you? If you throw this shower (and I'm strongly advising you not to), you are the host and it is your responsibility to provide refreshments for your guests.
Seriously, get a clue. A whole bunch of them in fact.

A stripper? That sort of thing belongs at the staggette, not a shower. Showers are traditionally schmaltzy affairs suitable for maiden aunts, children, and nuns. You have silly games with sillier prizes, some light refreshments, some get aquainted chit chat and go back home 90 minutes to two hours after you arrive. Presenting the bride with black lace panties is about as racy as it should get.
Since everyone is already required to bring a gift, it's out of line to also ask them to bring food. Cookies, crackers, celery sticks, and that sort of snack is perfectly OK since showers don't last long enough for people to get really hungry.
I know that lately there has been a trend toward "shower inflation" with catered seated dinners, rented halls, hired entertainment, and so on. This is a trend that will backfire. People are often happy to give a small gift in return for some casual entertainment, but when the entertainment is so grand that a grand gift would be required these same people may simply decline to attend.

You know what? This is YOUR event. The bride doesn't care what you do -- which is a very strange attitude. I guess she just wants presents. So you can do whatever you want. Have a stripper if you want - so half the guests are conservative? So what? They might even get kick out of it.
How to do a potluck? Just include a slip in the invitation that says, "potluck dinner. Bring your piece de resistance"

I have been there and done that!
Our solution was to ask guests to bring their own families favorite dessert. You could supply a deli tray with cheeses and different breads, and a side salad, and let the sweets be the stars of the buffet table. Every one loves dessert, and everyone is looking for a new idea to serve their own families. This also is easier than trying to fill the entire menu with nothing more than a guest list.
A little easier on the guests too, considering a well made cookie can stand proudly next to a homemade cheesecake.
We did ask guests to allow us to cut cakes, pies, bars, etc., into bite size portions that were placed in foil and colored paper muffin cups. This way the shower guests could try bites of all the goodies, and ooh and aah over the whole array. One more added plus, and I'd save this for the frazzled, "got no time to bake" guest, boxed chocolates happen to be my aunts favorite family dessert.

The pot luck sounds like a good idea even if there are different tastes people can bring what they want. You can even make it into a theme like a fiesta or something. Have a sign up sheet and have people bring what they want. If the bride to be wants to get away for a while then do something that would suit her needs like make her queen for a day and you all do what ever she may need to give her a break. Compromise be nice do it with some class be cool throw a separate party with the stripper at a later date or time without the problem guest, or drop it for now. Be the peace maker be kind and see how you can get everyone to agree to get along for your friends sake be the problem solver and have some fun you might find the stick in the mud's are alot of fun you might be surprised.

Pot luck is fine.... When I retired, they hired a "stripper" for my retirement party---of course there were some VERY conservative women at this retirement luncheon so the stripper could be GORGEOUS, he could be BUILT well, he could allow me to sit on his lap and FEEL anything I wanted ---but, he kept his clothes ON. We have something in our areas called ZING-A-GRAM and these people dress in costumes (any theme you want actually) and come and do a lovely little song and SOMETIMES they strip and really get into it... BUT if you request clothes ON, they will do that as well... it can STILL be very fun even for the STUFFY CROWD......plus, what the bride to be does with her back turned ---well----- - - - - - - - - - -

Bridal showers should not have strippers IMO, that should be the bachelorette party.
And, if you are not in the bridal party, you don't HAVE to plan a bridal shower.
A potluck sounds great.
