CHOPSTICK TUNA CASSEROLE
1 (10 3/4 oz.) can cream of mushroom soup
1/4 c. water
2 c. chow mein noodles
1 (7 oz.) can white tuna, drained
1 c. chopped celery
1/2 c. mayonnaise
1/2 c. chopped onion
1 c. chopped roasted cashews
2 c. shredded Cheddar cheese
2 c. water chestnuts, drained
Salt and pepper to taste
Combine soup with water. Add 1 cup noodles with tuna, celery, onion, cashews, cheese, water chestnuts, mayonnaise, salt and pepper. Top with remaining noodles. Bake at 350 degrees for 30 minutes.
SAUCY MEATBALL SUPPER
3/4 lb. ground beef
1/4 c. onion, chopped
1 egg
1/8 c. milk
1/2 tsp. salt
1/2 dash pepper
1/2 c. (1 slice bread) soft bread crumbs
1 tbsp. snipped parsley
1/4 tsp. dried oregano, crushed
5 1/2 oz. condensed Cheddar cheese soup
1/4 c. water
1/8 c. dry white wine
Combine beef, onion, egg, milk, salt, pepper, crumbs, parsley and oregano. Shape into 1 inch balls. In large skillet, brown balls in little bit butter, drain fat. Mix cheese soup, water, wine then add to meatballs in skillet. Cook, uncovered over low heat for 15 to 20 minutes.

CHILI CHEESE FRITO CASSEROLE
chili cheese Frito casserole
1 pound ground beef
1/2 bag chili cheese Fritos
1 small can olives sliced, drained
1/3 cup diced sweet onion
1 cup Prego spaghetti sauce
2 cups shredded cheese, reserve 1 cup for topping
1 can corn, drained
salt and pepper
Brown ground beef with onions, salt and pepper to taste. Drain.
In a bowl, combine all ingredients except one cup of cheese. Mix well, spread in a 13 x 15" casserole dish, and top with cheese.
Bake 30 minutes at 350°F.
Enjoy.
MEXICAN CHICKEN CASSEROLE
1 large onion, chopped
3 medium tomatoes, peeled and chopped
2 cups chopped cooked white meat chicken
1/2 cup fat-free chicken broth
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
6 corn tortillas, cut into fourths
1 cup shredded fat-free cheddar cheese
Lightly spray an 11 x 7 x 1 1/2 inch backing dish with vegetable oil cooking spray. preheat the oven to 350 degrees. Saute the onion in 1/4 cup water in a medium skillet until tender, stirring often. Add the tomato, chicken, broth, chili powder, salt, cumin, and oregano.
Bring to a boil, reduce the heat, and simmer 5 to 6 minutes. Layer half the chicken mixture, half the tortillas, and half the cheese in the baking dish and repeat with the remaining chicken and tortillas.
Reserve the remaining cheese. cover the casserole and bake for 25 to 30 minutes. Uncover and sprinkle evenly with the remaining 1/2 cup cheese. Bake an additional 5 minutes, or until the cheese is bubbly.
Serves 6 2.09 grams fat per serving

Quick and easy one for you.
Tator tot casserole ( for a 2 Qt dish)
2 lbs hamburger or turkey meat
1 can cream of mushroom soup
frozen tator tots
shredded cheddar cheese
Cook meat then mix in can of soup. Once warm put in casserole dish. Layer with tator tots and cook in a preheated oven at 350 degrees for 20 minutes or until tator tots appear done. Remove casserole and cover with shredded cheddar cheese. Place back in oven for an additional 5 minutes. YUMMY! Double contents if cooking in a larger casserole dish.

A good broccoli and rice casserole goes well with anything.
first you steam a large bag of broccoli florets
cook your rice, I use boil-in-bag, 2 bags
in a big bowl mix your broccoli, rice, 1 can of cream of -your choice...chicken, celery, broccoli, or mushroom- soup
add 2 cups of shredded cheese
put into a large casserole dish, then crumble some Ritz crackers and cover the top, add a little butter
bake @ 350 for about 20-30 min.

Natalie's Baked Pasta Casserole
THIS IS A BIG HIT ANYTIME!!!!
What you need:
2 pounds of ground beef
1 big jar of your favorite marinara or pasta sauce
season salt
parsley
oregano
basil
thyme
pepper
1 green bell pepper thinly diced
1 tsp of diced onion
1 container of ricotta cheese
1 package of your favorite shredded cheese
olive oil
an oven
a casserole dish
a pan (for boiling the penne pasta or ziti in)
this is my own recipe and its REALLY REALLY GOOD!
brown 2 pounds of ground beef
add thinly diced green bell peppers. seasonings, and onions
(i used oregano, thyme, basil, parsley, season salt, and pepper)
in the mean time, boil ur pasta (penne or ziti) until they are al dente or sorta hard
throw a lil olive oil (1 tablespoon) into the meat mixture, then add your favorite marinara or spaghetti sauce once the meat is cooked all the way through, and drained
mix the meat and sauce really good together!
then, smear a thin layer of olive oil on the sides and bottom of your casserole dish
preheat the oven to 400 degrees
pour a layer of al dente pasta into the casserole dish
smear on GENEROUS amount of ricotta cheese all over the pasta (make sure the ricotta cheese has been sitting out, so it smears easily)
add a layer of the sauce
add a layer of any of your favorite shredded cheeses, i get the four-cheese blend of italian cheeses that kraft makes
repeat process
bake in the oven until the cheese on top is golden brown! takes about half an hr.

I make this about once a week. You take your regular macaroni and cheese recipe and increase the cheese a little bit. You add a can of corn and a pound and a half of ground beef (seasoned wtih Lawry's Seasoning Salt) into the mac and cheese. Super good, cheap and easy.

this is my own made it up myself
4cups cooked rice
3cup boiled chicken breast(deboned and chunked)
1 small can of nacho cheese sauce or chedder cheese soup
1 package of fiejta mix
1 jar taco sauce or salsa
mix all ingredants well place in casserole dish... top with mexican shreded cheese... bake at 350 degrees for 20 mins it is delish
