My son is coming home from college tomorrow and he wants me to make twice baked potatoes...I know how to make them..have before...just wanted to know if I could or should bake the potatoes tonight...would it affect the texture if I scoop the flesh out when it is cold?...thanks

It will be fine to do as much or as little as you want to do. The taste and texture WILL NOT be affected either way. Just do the final steps before serving. Good luck and hope your son enjoys.

Having worked many, many years in restaurants, I would say yes, it will effect the texture. If you whip cold potatoes, they will come out lumpy.

Its best to scoop the potatoes while they are hot. I put on two or three rubber (food grade) gloves on my left hand and scoop with my right. Work quickly and mash the pulp ASAP before it cools down. This will give the smoothest texture to the finished product.

The same principle works for mashed potatoes. You wouldn't cook the potatoes the day before you mashed them, would you?

If you're going to bake them tonight, I would scoop them tonight just because it'll be easier while they're hot. I think it'll turn out terrific, so no worries, whatever you want to do is great, but yes, the exact answer to your questions is yes, you can pre-bake your potatoes today for tomorrow. Definitely, yes! I do it all the time. Just let them come close to room temp before scooping, or scoop very carefully. They'll be perfect.
