I dont eat red meat and my father in law cant have dairy. I have to cook for 6 adults and am kinda lost at what to do? They will be here for a couple of days so I need all sorts of ideas and recepies (breakfast, lunch and suppers!)

Low-fat Breakfast Burrito

Serves:



A delicious breakfast burrito low in fat and cholesterol with the great taste of California Avocados.

1 large potato, diced
½ small onion, diced
½ small California avocado, mashed
2 tortillas burrito size
¼ block of firm tofu, crumbled
4 strips of veggie bacon, crumbled, or 4 veggie breakfast links, chopped
Cheese
Salsa
Lite sour cream to taste

Instructions

In a nonstick pan, coat bottom with vegetable oil or nonstick spray.
Fry potatoes until lightly browned.
Add onions and fry until translucent.
Add a very small amount of butter and add the tofu.
Fry until tofu starts to turn yellow.
For best results, fry everything with a lid covering the pan.
At the same time, bake in the oven or in a toaster oven, the bacon or sausage according to directions on the package.
Heat the tortillas, fill with the vegetable & tofu mixture, bacon or sausage, and cheese, sour cream, and salsa.
Wrap and eat.




Smoked Turkey, Tomato & Gouda Panini

Servings
Makes 4 panini sandwiches


Ingredients
8 slices crusty country bread (about 7 x 3-1/2 x 1/2)

4 teaspoons extra virgin olive oil

2 teaspoons Dijon-style mustard

4 ounces Gouda cheese, shredded or very thinly sliced

8 ounces thinly sliced smoked turkey breast

12 thin slices tomato (beefsteak) or 16 thin slices Roma tomato

2 ounces very thinly sliced red onion



Instructions
Preheat the Cuisinart™ Griddler in the closed grill position on 375°F. Lightly brush one side of each slice of bread with the olive oil. Lay 4 slices of bread on the work surface oiled side down. Spread lightly with mustard. Build the sandwiches in this order -cheese, smoked turkey, tomato - using equal amounts of each item on each sandwich. Top with the remaining sliced bread, oiled side up.

Lay two sandwiches on the bottom grill plate of the preheated Griddler™ evenly spaced. Close Griddler™ and apply light pressure to handle for about 30 seconds. Grill panini for 3 to 3-1/2 minutes. Remove to a rack and keep warm (an oven preheated to 175°F). Grill remaining 2 sandwiches in the same way. Cut in half on the diagonal to serve.

1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese



PREHEAT oven to 400°F. Place tomatoes in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.
PLACE chicken in 13x9-inch baking dish; sprinkle with the basil and cheese. Top with stuffing mixture.
BAKE 30 min. or until chicken is cooked through.

Mmmmmm.....water!

I don't know if you consider fish to be a red meat....but...

Try Salmon. If you go to Wal-mart, they sell individually packaged salmon fillets for around a dollar each. The teriyaki ones are delicious. Also, they're super easy to cook, it only takes about 5 minutes in the skillet once thawed.

To go with them, I just make rice. But when you add the equal part water, leave a little empty space in the measuring cup and add some teriyaki merinade. It flavors the rice very nicely.

Then, just place the rice on plates, and put the salmon on top.

Here's a yummy, easy vegan recipe that has totally "normal" ingredients:
Cook 1 lb. of spaghetti or linguine, save 1/2 cup of the cooking water

Heat 1/2 olive oil in a large skillet, add 12 large cloves of garlic, thinly sliced
(optional: add 1 tsp crushed red pepper)
Coook for 5 minutes, until garlic starts to turn golden brown

Add 1/4 cup finely chopped flat-leaf parsley and 1/4 cup chopped walnuts and reserved pasta water. (Optional: fresh spinach leaves - tastes good with these ingredients and is an easy way to add a green veggie. Otherwise, serve with salad.)
Cook another 5 minutes

Add cooked noodles (tongs helps separate them and coat better with the garlic/oil mixture), salt and pepper to taste. You can also squeeze in a bit of lemon juice or grate in a little lemon zest.

Enjoy!

Breakfast can be: Oatmeal made with water and/or apple juice instead of milk; toast with nice jams; cereal with soy milk, if fil likes it.

Hummus is a great vegetarian, non-dairy food for a lunch or dinner if you have some good bread and veggies for dipping and spreading. I'm pretty sure pita bread is always non-dairy, though I guess you have to read labels to be sure about bread products.

There are lots of great vegetable soups, whether ministrone, cream of broccoli or cauliflower or a simple vegetable soup with boullion and cut-up veggies like carrots, parsnips, potatoes.

And if your fil can eat eggs, you can make a nice omelette for breakfast, lunch or dinner. A Spanish omelette (tortilla, as it's called in Spain) with potatoes makes it more substantial.

Also, Indian or Thai take-out is great for non-dairy and meatless, and you can set up make-your-own Mexican tortillas or tacos and your fil can opt out of the sour cream and cheese.

The Asian cuisines don't tend to use dairy, and as a meat sub, you can just use heartier meatier vegetables (eggplant, mushrooms, etc) and tofu or just add more veggies. You say meatless in your question but you emphasize red meat in your details, so I will just remind you that there is chicken, turkey, etc. A nice stirfry always seems to hit the spot with most folks. The trick is to make sure that all your ingredients are roughly the same size pieces so they cook close to the same amount of time, and layer in longest cooking to shortest, for a perfect stirfry. You can serve this on a bed of rice.

Peanut butter and eggs are good for snacks, breakfasts, and midday meals. You can make a peanut butter sauce that is good on rice noodles, add some shrimp and roasted peanuts for a type of Americanized version of pad thai.

You can do fish and salmon, served with any style of potato, and a veggie.

You can do a roasted chicken with rice and veggies.

You can do turkey burgers, with cheese for those who like it and omit for those who can't have it. Serve with raw fresh veggies or salad and french fries or chips. Ground turkey is so good to use for different things, esp to feed a crowd because it is versatile, straight substitution for hamburger (a million recipes) as well as being CHEAP. When I buy frozen tubes at Walmart, I pay $1.27 a pound.

If seafood is a viable option you can serve it any number of ways, a Cajun feast comes to mind with gumbo, a crawfish boil, or ettoufee or jambalaya.

For any recipe that calls for milk you can use soymilk. It tastes funny to some, so many people don't drink it or use it on cereal, but you can cook with it....muffins for breakfast, omelets (can omit milk altogehter but some include in scrambled egg mixture) or for pancakes, mashed potatoes with margarine instead of butter. Another mashed potato trick is to mash in some broth (veggie or chicken?) as well as some of the potato cooking water to thin them out, instead of milk and for a creamy taste you could also use non-dairy liquid coffee creamer. Coffee creamer liquid is a very decadent addition to a bowl of cereal, used alone or to mask the flavor of soymilk.

Peanuts and whole fresh fruits and raw veggies make a great snack so keep bowls full on the counter for nibblers.

U should try going to a local grocery supermarket store that has vegan and soy products.I am a vegan and u can find some really yummy and healthy food that is meatless and dairyless.

I made vegetarian chilli two nights ago and my boyfriend (who loves meat) didn't even realize. He loved it.

I used a package of Veggie Mexican style meat, kidney beans, pinto beans, black beans, lima beans, etc., green chillies, jalepeno peppers, tomato paste, a can of stewed tomatoes, chilli powder, a couple cloves of garlic, salt peppper, celeri, onions, green pepper, red peppers.

I put it all together the night before then cooked it all day in the slow cooker. Delish!!

You may want to check out the preferences of those coming over because while you can usually go meatless or dairyless, going without both of them tends to be yummy-less regardless of the recipe.

Is dependent on the context really. Which is better as a snack - fresh fruit to me. It's tastier and gives you that little of sweetness. Which can be better as a snack if you are trying hard to lower back on sugar and lose weight vegetables
