I do mine for about 4 1/2 hours. But I also make mine from scratch. I love the taste of fresh veggies and herbs cooked together until they kinda mold into a flavor like spagetti sauce. Simmering thickens it and I also love my sauce nice and thick so I can sop it up with pieces of hard bread doused in olive oil!!! I'm getting hungry just answering this!!!

My personal preference I let the Spaghetti Sauce simmer for about an hour or so (with the meat in it) to enhance the flavor more...
You just have to make sure that you stir it frequently so that it all simmers about the same....

Longer is better, of course, but sometimes if I'm in a hurry it doesn't simmer that long.
But if time isn't a factor, simply taste it and when it is how you like it, waa-laa
