No, that's perfectly good English. In fact to 'take someone up' on an offer was used more years ago than it is now, so if you're writing it to someone in his 80s or 90s you are only speaking his language! 8^)

It's not disrespectful at all. In fact, it's a very standard line. Go ahead and use it.

I don't think it's disrepectful, but it might not be professional either- depends on the setting. If you're "taking up an offer" for a job in a conservative setting, like accounting/insurance/banking, it may be better to say that you "would like to accept your offer".

No, I think it's fine. In fact, age has nothing to do with that statement, it's still used widely today among all age groups.
