for most the first 2 weeks on a reduced calorie diet the majority of the weight lost on the scale is water as stored nutrients are metabolized for energy. it can take a good 3-4 weeks before measurable fat loss is achieved through body fat analysis. rapid weight loss will always mainly be from water as the body does not go from fat storage to that of accelerated fatty acid oxidation, this is basic human biology.
to maximize fat loss while preserving muscle mass you should not consume less calories than your BMR requires. you are definetly consuming less calories than your BMR requires which not only increases muscle loss but it impedes fat loss. you have to eat to get lean and you have to eat to get fat, it's how much and of what that makes the difference.

You are eating too few calories. Men need more calories than women do, so for an average woman to lose weight, she would need to consume around 1200 calories per day. A man would need to consume more like 1800. It's not healthy to lose more than 1 or 2 pounds per week unless you have a lot of weight to lose, like over 100 lbs.

your body is use burning off more calories than you are now comsuming so until it realizes how much you are taking it, it will lower how much it burns off....also most of it is probably water and such...your body is going to go into shock because your eating so little and after awhile your body will begin to store all the food you eat as fat because it won't know when it will get another meal...you probably won't notice it while you are on such little calories a day but you can't live like that forever and when you start uping your calorie intake you will gain alot of it back....and your not exercising to help maintain a healthy weight once you get there (you said your loosing it with just dieting)....i would up the calories to a healthy level and start exercising

If your only eating 1000 calories a day, then your starving. Your losing water weight and muscle, and it will come back and then some.
