It will freeze but when you defrost it it will just be wilted slime.
I keep lettuce fresh by washing it, drying it well and wrapping it loosely in a kitchen towel and then putting it in a bag. It keeps well for a week or so in the bottom of the fridge.

Never ate frozen lettuce, so I can't answer the ice cube versus just cold question. However, if you freeze lettuce it will not "stay fresh"; it will turn slimy and limp when you thaw it out.

It will wilt! You can't freeze leafy greens. Now if you want to go for that effect use a bowl with some ice water in it and soak the lettuce in it for 5 mins and you will then have crisp lettuce!

If you freeze lettuce, it will be soggy and limp when you thaw it. Vegetables can really only be frozen if you plan to cook them afterward, in part because they need to be placed in boiling water before freezing, and also because freezing expands the water in the plant cells, destroying the original structure of the plant.
And it will be really really cold when you take it out of the freezer :-)

You can’t freeze lettuce. It’s thin and doesn’t have the same structure as broccoli or green beans. You’ll have a mess that will not be edible.
