I was always told that microwaves work better to heat food with a higher moister content (Water). But recently I heard it is food with a high fat content that makes it heat the food better. The more fatty the food the better it heats. The latter makes no sense to me because you would not be able to heat a cup of water then. Anyone know the real answer?

Higher fat content is better. You can heat fat until ther is nothing left but carbon.

Yes you can heat water easily, but you cannot heat it higher than 212 Deg F. because then it becomes steam, or water vapor, so the maximum temperature that you can heat water to is limited to the boiling point of water.
