I made some and it turned black after 12 hours. Can I still eat it?

Yes, you can eat it.

The black is usually on the surface due to enzymatic oxidation. Sort of how a cut potato turns brown along the cut edge.

It's not mold or bacterial. What are people thinking? lol.

It should be okay to eat after it turns brown, but only up to a day. Guacamole normally turns brown within a few hours of making it. If you made it yesterday, then even though it's brown or black it's okay to eat today. Just stir it up first. It might be okay to eat until tomorrow but I wouldn't take my chances after that.

its perfectly fine to eat it...it just gets that way because its been exposed to air for a long period of time. a tip for when you are storing it is if you have it in a tupperware container, put a piece of plastic wrap directly on top of the guacamole before you put the lid on. that will keep the air from hitting it.

a lot of these responses are dumb WTF mustard in guacamole? -_- the trick is simple JUST LEAVE A SEED or 2 in the guacamole and it stays longer....just eat it fresh don t let it get too old if you have too much don t make that much next time just kuz we live in an era of highly processed foods w/ insane amount of salt preservatives doesn t mean you can treat all foods that way just plan your guacamole recipes to be eaten that day or the next day maximum the fresher your guacamole the better

It won't make you sick - just unappetizing in appearance. Best to make and use soon after before it starts to turn. However, adding citrus (lime, lemon juice) or vinegar (which is what is in the mustard suggested to use) certainly helps prevent the discoloration, as does the tight fitting wrap to prevent air contact.

Just pour a bit of olive oil on the top, cover and store for several days..voila, no black! Works every time.

Yes, you can! And no! it's not mold! Next time it would be better if you put 1/4 of a teaspoon of mustard so that it doesn't turn black. it really does work! Also cover it well to keep it fresh.

yeah, just stir it up, next time add some mayo or lemon/lime juice, oh yeah my mom used to throw in some of the pits in the middle of the guacamole-it just looks nasty!

It's probably ok. Stir it up and you should see green again. The avocado oxidizes in air. To prevent this (at least to some extent) in the future, mix it up with lemon juice. The lemon prevents the oxidization and the guac will stay green longer.

yes, stir it up a bit.

avocados turn like bananas and apples do in the air.

also, if you leave an avocado pit in the guac while you are storing it, or make sure the container is filled up to the top and the lid left no air in it, it will prevent the browning.
