Would it be safe for me to say that for the Shia its Grand Ayatollah Ali Sistani?

But who amongst the Sunni? Or what masters gain respect amongst the Sufis?

Kasiroy - But surely there must be some "leading lights" amongst them? Either in terms of their contributions to theology or as exemplars of their faith.

Why have we not heard of such people?

Your Question does not clearly states whether you are asking for the present or past leaders.

If you are asking for the present then the Righteous and Pious Sunni Muslim Religious leaders cannot survive, sooner they will be killed or sent to jail by the rulers of their own country, as they speak the Truth which goes against them.

Again there are groups and each has their own respected Religious leader.

As I see only in Iran it is their Religious Leader who is highly regarded respected and even rules the country.

Among Sufis I do not see any who has attained such fame these days to be denoted as highly respected, while many Muslim Brothers even disagree with Sufism.

Regarding the Past:

Unfortunately it is the History that the highly regarded and respected leaders after our Holy Prophet peace be on him who were his companions and who took over the leadership of Muslims were martyred.

They were Hazrat Umer, Hazrat Uthman and Hazrat Ali, May Allah be pleased with all of them. Among them Hazrat Ali May allah brighten his face was the most knowledgeable after our Holy Prophet peace be on him and also from his family and other companions used to obtain advice from him.

Shia Brothers regard and respect Hazrat Ali over other companions of our Holy prophet peace be on him.

Even Sufis take Hazrat Ali as their guide and Mentor and benefit out of his and his children wisdom may Allah be pleased with all of them.

Yes for Grand Aytatollah Ali Sistani

Ayah means sign
tullah means of Allah.
Ayahtullah means Sign of Allah.

Amongst Sunni are many in each country
I don't believe in suffism and do not know about them
