I know that humans have three - blue, green, and red - and some animals have even more, allowing them to see things we can't - but I've always heard that dogs see in black and white. How many cones do they have in their eyes, if any?

Dogs have two sets of cones, which is why they are Red-Green colour-blind. They don't see in black and white. Rather, instead of seeing Red, Orange, Yellow, Green, Blue, Indigo, they see Yellow, Yellow, Yellow, Green, Blue, Indigo.
