Simmer beans with lid on for about four hours, checking every hour to make sure beans continue to have enough water.

You'll still need to cook them at least an hour. It really depends on the beans. Just to let you know...soaking overnight opens up possibilities for fermentation, which is often responsible for gas.
For next time, do it this way:
Rinse beans in several changes of water, until water runs clear.
Cover beans with roughly 3x more water than beans. Do NOT put salt in the water!
Bring to a boil, then lower heat and simmer the beans about 2-3 hours, covered. If the water evaporates, add more.
When the beans are very soft and mushy (take one out and squish it with your finger...when it mushes without resistance...no sign of firmness or dryness, the beans are ready).
At this point, add plenty of salt, and simmer another half hour, uncovered.
This is a traditional Mexican way of cooking pinto beans. Works like a charm every time.

Drain your soak water, rinse, and cover them with fresh water, at least an inch above the top of the beans. Bring to a boil, reduce heat, cover and simmer for 1 1/2 to 2 hours. I usually just taste test until they are the right texture...
Cook them with celery to reduce gas...
Make sure you don't salt them until they are done cooking, as salt can keep them from softening.

My mom takes the beans and adds the following
1 ham hock or some salt pork...or diced up bacon
1 small diced up onion
3 tablespoons of diced garlic
1 seeded,diced up jalepeno
pepper to taste
you can salt once they are cooked
Place beans in fresh water...3x the amount of water than beans. Then add remaining ingredients. Place in crockpot on high..or in pan on stove on medium high..watch the water line and make sure they don't dry out.

about 2 hours on low, stirring occasionally, or about 4-5 hours in crockpot.
And if you pour off the water they soaked in and replace it w/ fresh water or stock, they won't give you gas. :-)
