Simply because if you suppose creationism is correct, you are saying that the forming of life is a mystery not only to man but to God, and regardless of all the complex intricacies of Gods universe, God was unable to find a logical way to create life, instead he used magic, and everything simply appeared.

It would be offensive to God to quickly assume God is unable to manage something greater than our limited human understanding.

God is the designer of the universe, he can do whatever he wants, by questioning his methods of design you would be the one offending him , God works in mysterious ways and you would be wrong (using your own words) to assumed God works by a limited idea of logic.

While some people support the idea of theistic evolution, that is that God was in charge of all of the mutations and controlled how different species would come about and when the idea that it is an insult to believe that God could create complex creatures by the force of his will in an instant because the Bible seems to teach that is not reducing God to the status of some sideshow magician.

The Bible clearly teaches that God is the creator of all things including the very atoms that make up every material object in this universe. He is the un-caused first cause of all creation. The eternal, omnipotent, omniscient God of Heaven and not some super being who came along in space and found the planet earth already here and decided to spend a few billion years doing a science project by arranging natural forces and matter in such a way that like some fantastic trick pool shot it resulted in every complex creature here on earth including mankind.

I don't think our limited understanding offends God. On the contrary, as we seek out answers through science, we are seeing His miraculous workings unfold. Upon contemplating the universe, how can one not believe in a higher intelligence that has created it, rather than mayhem chaos? Everything is perfectly ordered.

Only 1 thing we know for sure is that God loves us soo much, He sent His only son to grant us eternal life. Surely then, when we are with Him in heaven, all will be revealed.

Nothing is a "mystery" to God. You attempt to devalue Him by rejecting the truth that He simply creates things as finished products from nothing.

"Offending God"??? Is that anything like "offending Santa Claus" or "offending the Easter Bunny"?

Offending make believe characters doesn't really bother me.
