Potatoe Tacos
Recipe: Add cooked potato chunks to fried chopped onion and bacon. Fry slowly on low heat until crispy. Fill flour tortilla with potatoe mixture, top with sour cream and shredded cheese. Be creative....add tomato salsa and or.............

Avacado/Turkey Tacos
Recipe: Fry ground turkey and onions. I add chile powder, garlic chips and fresh oregano toward the end of the cooking process.
Slice avacado wedges and place them into two (double), warm corn tortillas (If you only use one it has a tendency to crack and you loose the mixings). Sprinkle shredded cheese and raw (soaked in water) chopped onions. Drained of course!
Scoop the fried turkey mixture into the double corn taco wrap, open your mouth and enjoy.
Sometimes I add shredded lettuce and salsa.
Dang! I am so HUNGRY now!

P.S. It really helps if you have a tortilla bowl with a lid to keep the tortillas warm. (You can find them at a local Mexican market.)
Place these recipes in big dishes with the condiments in smaller bowls and this way your guests can serve themselves choosing whatever mixture they want in their tacos.

Make fish tacos. They're easy. Get some fish sticks, some shredded cabbage (like cole slaw mix in a bag), and some tartar sauce or ranch dressing, or plain mayo if you're boring. Diced tomatoes, cilantro and jalapenos are optional. Just heat the fish sticks, and put in a tortilla with some slaw and dressing.
