SPICY DEVILLED EGGS

6 hard cooked eggs
1 tbsp. fresh parsley
1 tbsp. scallions, minced
1 small jalapeno pepper
1/4 cup Miracle Whip
1/4 cup shredded cheddar cheese
1 tsp. Dijon mustard
1/2 teaspoon cilantro (optional)
pinch cayenne pepper
pinch chili powder
1/4 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon horseradish, grated
1/4 teaspoon celery seed

Slice each egg in half crosswise. Scrape out yolks saving contents in a bowl. Add mayonnaise, mustard and blend together. Add remaining ingredients to combine.
Spoon approximately 1 tbsp. of the yolk mixture into each egg half. Sprinkle lightly with chili powder and paprika. Garnish with a sprig of parsley.


POTATO AND EGG BAKE

1/2 teaspoon butter
1 1/2 cups mashed potatoes
4 eggs
2 tablespoons grated Velveeta Cheese
1 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder

Preheat even to 400°F.
Prepare mashed potatoes as you normally would.

Butter a 9 inch casserole or baking pan. Spread hot mashed potatoes evenly in the pan and make 4 indentations. Break an egg into each well. Sprinkle Velveeta over the potatoes and eggs.

Season with salt, pepper and garlic powder. Top with a sprinkling of paprika.

Bake in oven for 10 minutes until the eggs have set and the cheese is melted

One Cake- its portuguese called Pao de lo. Its a sponge cake flavoured with orange... and uses 12 eggs. This is a very old recipe (my family one actually) - hence the lack of actual measurements- because the chickens would obviously lay different size eggs every time. Good luck!

12 eggs,
Same weight in sugar (weigh the eggs- however much that is)
1/2 weight in flour (weigh the eggs- however much that is divided by two)

Juice and rind of One orange

1. Cream egg yolks with sugar. Add zest of orange. Whip egg whites and fold in. Pour into a cake tin with hole in the middle. (after buttering + flouring the tin) Bake in a medium oven until risen and brown. * it goes pretty high- so don't fill a tin all the way up!

How about making Deviled Eggs.
Boil the eggs to hard boiled. Take the shells off and cut in half. Take the yolk out and put in a bowl
add mayo, mustard, pickle relish either sweet or dill (I prefer dill) salt and pepper and garlic powder to taste. Put on a plate and sprinkle paprika over the top. They are delicious and are also a big hit at any party.

You could make lots of deviled eggs or make an egg pasta frittata which calls for 12 lg eggs... The recipe is as follows:

1 12 ounce box egg fettuccini pasta
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1 cup heavy cream
1 cup grated Parmigiano-Reggiano
1/4 to 1/2 teaspoon grated or ground nutmeg
Salt and black pepper
1/4 cup chopped flat-leaf parsley
12 extra large eggs, beaten
HamSteaks, recipe follows

Preheat oven to 425 degrees F.
Bring a large pot of water to a boil and salt it. Add pasta and cook 6 minutes -- to a chewy al dente. Pasta will continue to cook in frittata. Drain and reserve.

Heat a large nonstick skillet with oven safe handle over medium high heat. If all of your skillets have rubber handles, cover handle tightly in foil to protect it. Add oil and butter and melt together. Add cream and reduce for about 3 minutes. Add cheese and nutmeg, salt and pepper. Toss sauce with cooked pasta to coat. Add parsley and beaten eggs to the skillet and stir gently to combine. Allow the eggs to set up on the bottom of the pan and become firm. Transfer pan to hot oven and bake 10 minutes, until golden. Serve from the pan or transfer to a platter. Serve hot or cold, cutting frittata into wedges and serve with Ham Steaks.


Ham Steaks:
1 tablespoon extra-virgin olive oil
2 to 3 large ham steaks, cut in halves
Heat a large skillet, with olive oil. Add the ham steaks and heat through, 1 to 2 minutes on each side.
