In the oven. Ok in all seriousness, soak the seeds to clean them, dry well, put them on a baking sheet, add salt to taste and bake in the oven at 250 for about an hour tossing every 20 minutes or so.

How to Bake Pumpkin Seeds
Introduction
Here is an easy and fun way to make the perfect holiday treat! Whether you are planning a holiday party, a family get-together, or just want a tasty snack this holiday season, roasted pumpkin seeds may be just right!
Instructions

* pumpkin seeds (left over from your jack o' lantern)
* collander
* baking tray or pan
* non-stick cooking spray or butter/margarine
* salt
* your favorite seasoning (optional)

Steps
Step One
Preheat your oven to 350 degrees and place the grill in the second rung from the top of the oven.

Step Two
Separate your pumpkin seeds from the insides of the pumpkin that you just carved for the holidays. If you want, you can also use the insides for holiday recipes.

Step Three
Lightly rinse your seeds in a colander to remove smaller bits of pulp. You can choose not to rinse them and this will retain more flavor, but you will have to deal with the pulp when you eat them.

Step Four
Spray your baking pan or melt your butter/margarine and mix it well with your seeds, and then place them in the pan.

Step Five
Mix in about 1 tsp salt for flavor, depending on how many seeds you have. If you want to add any other seasonings, such as garlic, cinnamon, creole, or whatever you like, now is the time to do it!

Step Six
Allow your seeds to bake for about 10 minutes or until they are lightly browned. Turn them once during this 10 minute period.

Step Seven
Allow your seeds to cool and store them in an airtight container. Enjoy!

I usually clean them real well, then mix some salt on them, spread on a baking sheet in a single layer, then bake in the over at eithe r250 degrees or 350 degrees, depending on how fast I want them done. You have to check every few minutes, and stir so that they don't burn, but cook evenly. When they are cooked enough to your taste, remove and let cool. I think it really only takes about 10-30 minutes depending on how high the heat is.

For fun, you can make different flavors. I've used garlic seasoning, peper, and even cinnamon and sugar for a caramel coating...that was REALLY good!

Yep, wash them then bake them for an hour at 250 stiring them up every so often. Although most people just salt their pumpkin seeds while baking, don't forget that you can add other seasonings too. Personally I'm a big fan of garlic powder.

Chey is right. You can also roast them in a pan on the stovetop. Same thing. A little oil; and don't forget the salt.
