Tomato and Blue Cheese Dressing
Ingredients:


1 1/4 cups fresh tomatoes
8 ounces package fat-free cream cheese
2 tablespoons blue cheese
Several lettuce leaves
1 onion, grated
Salt and pepper to taste
A handful parsley
Preparation:
1. Arrange a bed of lettuce and place sliced tomatoes on top.
2. Mix cream cheese and crumbled blue cheese; add grated onion, salt, pepper. Use as a dressing for the tomatoes and garnish with parsley



chicken cordon bleu

INGREDIENTS
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

Snap off the tough parts and cut the asparagus into spears.
Heat the oil over medium heat and add asparagus and garlic.
Cover and cook, stirring occasionally until the asparagus is barely tender, about 5 minutes.

5 tablespoons butter, divided
2/3 cup pine nuts
2/3 cup finely chopped shallots
16 ounces Israeli toasted couscous
1 large cinnamon stick
2 fresh or dried bay leaves
3 3/4 cups canned low-salt chicken broth
1 teaspoon salt
1/2 cup minced fresh Italian parsley

Directions:

Melt 1 tablespoon butter in heavy large saucepan over medium-low heat. Add pine nuts and stir until golden brown, about 8 minutes. Transfer to small bowl.

Melt remaining 4 tablespoons butter in same pan over medium heat. Add shallots and saute until golden, about 10 minutes. Add couscous, cinnamon stick, and 2 bay leaves and stir until couscous browns slightly, stirring often, about 5 minutes. Add broth and salt and bring to boil. Reduce heat to low; cover and simmer until couscous is tender and liquid is absorbed, about 10 minutes.


FALL APPLE CAKE

4 c. chopped unpeeled apples
2 c. sugar
1 cube butter
2 tsp. vanilla
2 eggs
2 c. flour
1 1/2 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
1/4 tsp. nutmeg
1 c. chopped nuts

Beat butter, sugar, vanilla and then eggs. Sift flour, soda, salt, spices. Sift into first mixture. Stir well. Mix in nuts. Bake in greased tube pan at 350 degrees for 45 to 60 minutes.

When I was a kid, I thought it was pretty fancy to make scrambled eggs and then sprinkle paprika on the top!

I don't know your level of cooking skills, but a nice pot roast with carrots, onions and green peppers and potatoes (either in with the roast or mashed separately) can be considered fancy and I know it's delicious. Serve with tossed salad or Waldorf salad if you've got the skills and the apples.

simplest way? take the ingredients you already have, make something you already know how to make and make the fancy bits the garnishes and the serving. Put out a tablecloth, real napkins, crystal, silver flatware, flowery centerpiece. Garnish with cherry tomatoes and olives skewered on toothpicks, orange twists, fresh parsley. Make it look special and it will feel special. Not to mention the fact that (I'm assuming this is for your parent(s), they'll love the effort you've put into it all.
