Is it possible that this concept is not the correct one at all?
That eating from the forbidden tree actually lifted mankind above the plane of 'animals' and mankind became a, well, human being at that point?

No, I am not saying the Bible is wrong. I'm saying the Bible does not use that terminology and we have might possibly have misinterpreted the whole concept.

The story is told in Genesis. I, however, tend to agree with you, that the eating from the tree of knowledge is metaphorical for a time when human beings became separate from animals due to their ability to be self-aware/sentient.

That's more than one question. You start out asking where the Bible talks about it, then you imply that the Bible might be wrong, as though you already knew what it says.
I'll assume you really want an answer to your first question:
Genesis chapters 2 and 3, particularly 3
There is also some mention of it in Romans 5 (6th book of the New Testament).

Genesis chapter 3 deals with the fall of man ... it talks about how when Eve and Adam ate of the fruit, they did become enlightened. The phrase "fall of man" has nothing to do with enlightenment or intelligence. Instead, it refers to the fact that Adam and Eve disobeyed God.

And no, the concept is not incorrect. The concept holds true to what it has always been. The only thing that can change is our interpretation of it. Ultimately, everyone chooses what they are going to believe, and we all have to make our own decisions regarding God, the Bible, and what is true.

If this body of mine is what you call being lifted, I would have hated to see what it was before. Come on man, You are basically calling the The Holy Bible a Lie, thats risky. If the Bible is right you are spending eternity with the devil in a lake of fire. That doesn't sound to promising. I suggest you read the Gospel of John with an open mind, and be willing to accept the truth when you see it. One of our problems today is we want things to be our way and thats the only way we will accept it. The Bibles says Because the foolishness of God is wiser than men; and the weakness of God is stronger than men. 1st Corinthians 1:25. We must do things the way God wants, we are his creation, going against the wind gets us nowhere, we are not fooling Him, there is nothing new under the sun. God sees all, knows all. Read John 3:3, Jesus said Except a man be Born Again, he cannot see the Kingdom of Heaven, and of course you have to believe first. As Humans we are sinners. Jesus came and washed our sins away. When he arose from the grave, he forever opened the door to salvation to all who will call upon his name. Have you ever ask Jesus to save you, to come into your heart and make you a child of His, just pray this simple prayer believing, Dear Jesus, I know and confess that I am sinner in need of salvation. I believe you died on a cross at calvery and arose from the grave to wash away my sins, I ask you right now to come into my heart and save me, I pray this Prayer believing in the name of Jesus Amen. If you prayed this prayer with a sincere heart you are now a child of God, rejoice that your name is written in the Lambs book of Life. I think that's the gnotic view, that eating from the tree of knowledge was the "Liberation of Man."

The exact phrase doen not appear but everyone understands wht it means. Man fell from the glory that God had placed inside him and expected of him.
