it was a ritz cracker, wrapped in bacon, with i think a little cheese on top, but I am not sure since the "cheese" was reddish. It was so creamy and it melted in my mouth.

BACON CHEESE PUFFS

1 lb. cream cheese
1 egg yolk
1 tsp. minced instant onion
1 tsp. baking powder
2 1/2 tbsp. imitation bacon pieces
40 Ritz crackers

Combine cream cheese, egg yolk and onion in a large bowl. Blend until smooth. Stir in baking powder and bacon pieces and blend. The mixture may be covered and is ready to use when you are ready at this point. Mound 1 tablespoon on each cracker. Heat oven to 350 degrees. Bake 9 minutes or until cheese is puffed and lightly brown on top.

Don't recognize it with the bacon wrap, but port wine cheddar cheese spread is reddish and it's good with bacon stirred into it and served warm or cold on a ritz.

The "cheese" may have been aged gouda cheese, which tends to "melt," and usually has a red lining. Or, smoked salmon cream cheese, which tends to be pink in color.
