Just like any theme if it's done tastefully and with self-control it can be a very nice reflection of the couple. If you go overboard people will think tacky and kid's birthday party.
Pretty much choose three or four things that you are going to have the theme on. For instance maybe you choose the cake, favors, centerpiece and stationary.
What you SHOULDN'T do is go cheesy and plaster your western stuff on everything in sight.
I'm leery of having the men ride in on horses. It's one of those things that sound great on paper but don't always work out in reality. Horses are animals and don't care that it's your wedding. They pee when they want, shuffle around, poop when they feel like it, refuse to perform...etc. I've seen it happen a few times where the bride romantically rides in on her white horse which instantly decides to take a poop on the aisle and guests are stuck smelling it the rest of the ceremony.
If it was me I would have the horses but would save them only for pictures and probably use them in lieu of a limo to get to the reception so if accidents happen it doesn't distract from your wedding.

I think western weddings are great. If the horse will be trailered to a nearby location so he can ride up to the event and then the horse will be lead back to the trailer and taken away that might be okay. Another option might be an old fashioned stage coach. Or an open hay wagon although that might be a bit messy for the clothes depending on what the two of you will be wearing.

My cousin had a western theme wedding and it looked really nice. The reception had ropes in the shapes of hearts, boot and hat chocolates, and horseshoe candle holders. It looked really nice.
Riding in on horses might be a little hard to do. What would the women be coming in on? If they are just walking in, it might take away from the women's entrance.
Suggestion: Instead of coming in on horses, why don't you and your fiance leave in an old-fashion horse drawn buggey? The are just as western, and it looks really nice! He would still get his horse, but just in a different way!

Friends of ours got married on a ranch and the groom & groomsmen wore jeans, dress shirt and sportcoats. The groom rode in on a horse. Their reception was a fun BBQ. It was great and totally perfect for them.
I know of another wedding where the bride wanted to ride up on a white horse. It rained and she slid off the horse. She was a trooper and didn't let it bother her much, but she had to change out of dress and dry off for the reception. Not my idea of fun.

Considering that I've always lived in Oklahoma or Texas, I've actually seen several western themed weddings, and I think they're rather cheesy.

My niece had her wedding & reception in her dad's back yard... he lived on a large property. The whole family was very "cowboy" and they had haybales for the guests to sit on, everyone (except my niece who wore a white western dress) wore jeans & boots. It was SO much fun... It was exactly what they wanted and it was so relaxed.

Depends if you're having the horses stay the whole time! I wouldn't suggest it, but if he wants that dramatic entrance I'd say go for it, sounds fun!

I think it could be really cute. You could have tons of decorating ideas. You could do a lot with it. It sounds fun to me!!!!! You could have a ho-down, line dancing, etc....
Groomsman could wear bolo ties and cowboy hats with bandanas in the pockets of their tux.
You could have a blast!
