He is not picky, and I have cooked for him several times. I want to make something different that blows him away!

Me and my husband almost died when we tried this- it's SO GOOD! serve with some homemade mashed potatoes and a nice salad! He'll think you're a professional chef!

1 (10 ounce) package fresh spinach leaves
1/2 cup sour cream
1/2 cup shredded pepperjack cheese
4 cloves garlic, minced
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1 pinch ground black pepper
8 slices bacon


DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C).
Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.
Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.
Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon.

If he’s like most guys, he’s not going to be into an elegant fish or chicken dinner. Rachel Ray has some incredible steak recipes. How about a slow-cooker pot roast or pork roast? Or ribs?

This rib recipe is super easy. Just about everyone loves ribs and this is a recipe that tastes like you spent a lot of time and effort on it. You’ll get raves!

CUT ribs (3 to 4 pounds) into serving pieces. Place ribs in saucepot. Cover with water. Heat to a boil. Cover and cook over low heat 30 min. Drain.

MIX 1 can (10 1/4 oz.) Campbell's® Beef Gravy, 3/4 cup barbecue sauce and 2 TBSP packed brown sugar
in large bowl. Add ribs. Toss gently to coat.

Then, you can grill them or cook in 375 oven for 20mins. Turn once at 10min and baste. (Oven- line sheet/rack with foil for easy clean-up)

If you want additional flavor, add ¼ teas cayenne and 2 teas chili powder to the sauce.

You can use either beef or pork ribs. Most people prefer pork. Just pick up some coleslaw or potato salad from the deli. Or boil some corn on the cob or fix another veggie and you’ve got a complete meal. I’d pick up dessert at a bakery!

Cocktail Savouries.
Serve on tooth picks for easy handling.
(I) A steamed prune stoned, stuffed with cream cheese.
(ii) Cubed cheese, pineapple and cherry
(iii) Oysters rolled in bacon and grilled.
(iv) Sliced pickled onion and cooked sausage.
Gherkins, Pearl Onions, stuffed olives are all alternatives, to make your own combinations.

Dinner.
Baked Trout.
Remove head and tail and make two or three slices to the bone in each side.
Sprinkle with salt and some lemon juice. Place on, a bed of lemon slices, (from the lemons you have squeezed for the juice) on a piece of tinfoil.
Fold into a parcel and bake at 170C for about 15 minutes

Serve with baby potatoes, butter beans, and sweet corn.

Dessert.
Lemon Honey Pie.
500g (1lb) Sugar.
125g (4 oz) Butter.
4 Eggs.
Zest and Juice of 4 Lemons.
Grate the yellow parts of the lemons (avoid the white pith as it is bitter), strain the juice, beat the eggs a little.
Put all the ingredients into a double saucepan or put in a basin and stand in hot water.
Cook slowly until thick and smooth.
Cool.
Pour into pastry shell.
Pour some into sterilised jars whilst hot and cover when cold and use as a spread on your bread.
You can make it more tart by adding less sugar.

rock cornish hens. Inexpensive, about $2 a piece, and oyu only need two. Rinse cavity and stuff loosely with wild rice mix.
Serve as sides, fresh roasted asparagus, quick and easy to prepare, and fry some apple slices drizzled with a little maple syrup. Add some green veggie and I'd say you have a fuine meal

Guys LOVE meals that take all day to make. Try making roast beef, with mash potatoes, trust me he'll LOVE it!

He will be too full he wont try it on.

Or something light if you want him to.

CAESAR CHICKEN PASTA


7 ounces (2 cups) uncooked dried penne pasta
2 cups chopped cooked chicken
3/4 cup fat free creamy Caesar salad dressing
1/2 cup reduced sodium chicken broth
1/3 cup chopped green onions
1/4 cup finely choped red bell pepper
6 ounces (1 1/2 cups) LAND O LAKES® Mozzarella Cheese, shredded
1 1/2 cups Caesar-seasoned croutons


Heat oven to 350°F. Cook pasta according to package directions. Drain.

Meanwhile, combine all remaining ingredients except croutons in large bowl. Add cooked pasta; stir to combine.

Spoon pasta mixture into ungreased 2-quart round casserole. Top with croutons. Bake for 20 to 25 minutes or until heated through and croutons are golden brown.

Recipe Tip
Pasta is made from durum wheat flour called semolina and comes in hundreds of different sizes, shapes and colors. Cook pasta in rapidly boiling water to "al dente", meaning the pasta is slightly firm when chewed. Overcooked pasta is soft from having absorbed too much of the cooking water and will break apart easily when stirred into a casserole.

CHEESY SPINACH AND PASTA BAKE


1 (7-ounce) package uncooked dried elbow macaroni
1/4 cup dried bread crumbs
1 tablespoon LAND O LAKES® Butter
1 medium (1/2 cup) onion, chopped
1 teaspoon Italian seasoning*
1/4 teaspoon coarsely ground pepper
1 teaspoon finely chopped fresh garlic
1 (9 to 10-ounce) package frozen chopped spinach, thawed, drained
4 ounces (1 cup) deli LAND O LAKES® Mozzarella Cheese, shredded
1/2 cup freshly grated Parmesan cheese
Spaghetti sauce, if desired


Heat oven to 350°F. Cook macaroni according to package directions. Drain. Set aside.

Meanwhile, sprinkle bread crumbs into buttered 3-quart casserole. Set aside.

Melt butter in 10-inch skillet until sizzling; stir in onion, Italian seasoning, pepper and garlic. Cook over medium-high heat, stirring constantly, until onion is softened (2 to 3 minutes). Stir in spinach. Continue cooking, stirring constantly, until spinach is heated through (2 to 4 minutes). Stir in cooked macaroni and all remaining ingredients except spaghetti sauce.

Spoon into prepared casserole, pressing gently. Bake for 20 to 25 minutes or until heated through. Serve spaghetti sauce over baked pasta, if desired.

*Substitute 1/4 teaspoon each dried basil leaves, dried marjoram leaves and dried oregano leaves, and 1/8 teaspoon rubbed sage.

CREAMY SUN-DRIED TOMATO & SPINACH PENNE


8 ounces (2 1/3 cups) uncooked dried penne pasta
1 tablespoon LAND O LAKES® Butter
1 tablespoon all-purpose flour
1/2 teaspoon chicken bouillon granules
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1 1/2 cups LAND O LAKES™ Fat Free Half & Half
1/4 pound (1 cup) slice LAND O LAKES® Deli Swiss Cheese, shredded
1 (10-ounce) package frozen chopped spinach, thawed, well-drained
1/2 cup sun-dried tomatoes in oil with herbs, drained, coarsely chopped
Chopped fresh parsley


Cook pasta according to package directions. Drain. Keep warm.

Meanwhile, melt butter in 2-quart saucepan over medium heat until sizzling; stir in flour, bouillon granules, salt, pepper and nutmeg. Add half & half; cook over medium heat, stirring constantly, until mixture comes to a boil and thickens (4 to 6 minutes).

Remove from heat; stir in cheese until melted. Add cooked pasta, spinach and tomatoes; mix well. Cover; let stand 5 minutes.

To serve, spoon onto serving platter; sprinkle with parsley.

Recipe Tip
Do not rinse pasta unless recipe specifically calls for it. Rinsing can thin sauces and cause them to slide off the pasta.
