Walk the dog 4 times per day, or remove the plants. Trouble is then he pees on the carpets.

Maybe you should try making access to the plants difficult to attend to set barriers in order for your dog to stop attending the plants although i don't encourage your dog peeing on plants maybe you should try buying another set of inexpensive plants and replace them with the ones you actually care for while placing your plants in another location

Plant some poison ivy with your plants, and when your dog goes to do it's thing, push it into to poison ivy. Problem solved.
Plus, you could let the dog see you peeing on the plants, so it can see how silly it looks. Problem solved.

Ive made sure that by planting 100s of plants he rarely hits the same plant twice.

Are they high plants? If not, hang them from the cieling or put then in larger pots. The only reason he/she would be doing this is because there is another scent on them. Do you have another dog?

I used something once for my indoor xmas tree for my cats. It was called out of my garden or off my garden--they sold it at pet stores. Try asking sround at a pet store they would know of something. If you can, put the plants on a plant stand so it isn't low enough for him to pee on.....

Or black pepper. dogs sniff first. nasty i know. But I'm told it works. It is a last option.

Dogs mark their territory, or pee where other dogs have peed, for the same reason.

the first option reduces this.
