Party is on Sat. I want to make the dip tonight or Friday.

Friday would be best. You could maybe make them on Thursday, but you want them to be fresh.

sour cream, mayo and cream cheese based dips get better with a few days to allow the flavors to marry. Especially onions dip or spinach dip made with dired mixes. They are one of the first things I prepare for a party. Sometimes absolutely "fresh" isn't best.

You can make it Thursday night at the earliest.
The problem at my house is that the dip will disappear if I make it that early.

I'd go with Friday. They're fine for a few days, but they tend to get thicker/stickier as they sit.
