Egg noodles are particularly nice with gravy dishes. How about chicken fricassee.
Using a dutch oven (large pot) brown some chicken pieces (legs, thighs and breasts, or just breasts if you prefer) in a little butter, then add water (or some low salt chicken broth (not buillion cubes) to cover. Add salt & pepper & parsley and chopped onions. Cover and simmer until chicken is tender. Mix up some milk (always milk for chicken) and flour so that it pours but is fairly thick (using a whisk is best), and add a little at a time to the pot, stirring gently so that chicken doesn't fall apart. You can add a little more water to the base if you need to before adding the thickener.
You can use the skinnless boneless meats or not... that's entirely up to you. I tend to go for the healthier option, but it's certainly not necessary.
This meal is great served over egg noodles, or with mashed potatoes.
There's also chicken paprikash, which is a Hungarian dish. The chicken is cooked somewhat like the fricassee, only good Hungarian paprika is added, then when it's done... sour cream is stirred in. yummmm This is IDEAL with egg noodles. I'm Hungarian, so I've had and prepared this dish many times. I recently found a recipe that's pretty much how I make it.
Chicken Paprikash
Ingredients
● 2 chicken breast halves (about 1 pound), skinned
● 2 chicken drumsticks (about 1/2 pound), skinned
● 2 chicken thighs (about 1/2 pound), skinned
● 1/2 teaspoon salt, divided
● 1/2 teaspoon black pepper, divided
● Cooking spray
● 2 cups chopped onion
● 1/2 cup fat-free, less-sodium chicken broth
● 1 1/2 tablespoons Hungarian sweet paprika (I use more for more flavor (3-4 tablespoons)
● 2 tablespoons all-purpose flour
● 1 cup low-fat sour cream
● 4 cups cooked medium egg noodles (about 2 3/4 cups uncooked pasta)
Preparation
● Sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper.
● Heat a Dutch oven coated with cooking spray over medium-high heat.
● Add chicken; cook 6 minutes or until lightly browned.
● Remove chicken from pan.
● Add onion; sauté 5 minutes or until lightly browned.
● Return chicken to pan.
● Stir in broth and paprika; bring to a boil.
● Cover, reduce heat, and simmer 30 minutes or until chicken is done.
● Remove from heat.

Make tuna noodle casserole. Cook noodles by boiling them in water till they are almost done. Mix Cream of celery or Cream of mushroom soup with a bit of milk and a couple of cans of tuna. Drain noodles and add to mixture, put in a casserole dish and bake at 350* for half an hour. For a real treat, crumble some potato chips and sprinkle over dish before you bake it. Good Luck

upallnit has a great recipe there, my mom made it just like that when I was a little kid and she added peas to it so we would get our veggies.
You could brown some boneless skinless chicken breasts, cut them up in bite size pieces, mix in some alfredo sauce(the kind in a jar, may need 2). Also mix into the sauce some garlic powder and onion powder if you want. Put the cooked noodles on plates and put the chicken mixture on top. My son in law made it and it is easy and good.

Beef stroganoff is a great low carb dish without the noodles! The absolute BEST thing I have done is make "cabbage" noodles...stir fry sliced thin cabbage on top of the stove in plain butter, add seasoning salt and voile'~ a delicious egg free (and low carb) substitute. for you low carb lovers: P.S. I also have used cauliflower (boiled and smashed instead of potatoes) to make gnocchi and "potato pancakes"....Both are delicious and flexible.

Egg noodles are my favorites! Here are some ideas:
1. Egg noodles cooked in beef broth with wine, fresh spinach, garlic and shaved parmesan cheese.
2. Egg noodles mixed with cream of mushroom soup, sour cream, white wine, and grated parmesan or italian cheese.
3. Tuna noodle casserole with 2 cans tuna, drained, 1 package frozen green peas, 1 can cream of mushroom soup mixed with 1/2 cup milk and 1/2 cup sour cream, American cheese and bread crumbs!
4. Short ribs simmered in a red wine broth and served over noodles.
5. Chicken noodle soup with chicken broth, carrots, celery, onion, thyme, and noodles.
6. Noodle-mac with your favorite chili, cheddar cheese, onions and a can of sweet corn. Saute some ground beef, add diced green bell pepper and you have a good meal.
7. Make a bechemel sauce for your noodles and top with a mixture of sauteed ground lamb, garlic and onion. Top with fontina and bake.
The list goes on....have fun!

how about browning up some ground beef and add them to it later like you would Hamburg helper. or maybe a stove top type of mac. and cheese since the noodles only take a few minutes. to cook . also you can make them as a side dish and pour veggies over them.
