The best ruben is made this way... (at least I think it is)
Butter the rye bread (or marble rye) [one side - like grilled cheese]
then mix the dressing and sourkraut together
put a piece of swiss cheese on top of the bread, then some kraut/dressing mixture, corned beef, some more kraut if you want another piece of cheese and the other piece of bread.
Grill until both sides are brown, then put in hot oven for about 5 minutes to make sure everything is toasty!
YUMMY... its a culinary miracle!

Reuben Sandwich I
INGREDIENTS
* 8 slices rye bread
* 3/4 cup thousand island dressing
* 1 (16 ounce) can sauerkraut, drained
* 8 slices Swiss cheese
* 8 slices pastrami
* 1/4 cup margarine, softened
DIRECTIONS
1. Spread each slice of bread with thousand island dressing. Top 4 of the bread slices with sauerkraut, cheese and pastrami. Place remaining bread slices on sandwich. Spread margarine on the outsides of each sandwich.
2. Heat a large skillet over medium high heat. Grill until browned, then turn and grill until heated through, and cheese is melted.

Reuben Sandwich:

Thousand Island dressing
corned beef
sauerkraut
Swiss cheese
PREPARATION:
Spread 2 slices of rye bread lightly with Thousand Island dressing. Put a layer of sauerkraut over one slice, then top with a slice of corned beef then a slice of Swiss cheese.
Top with the second slice, mayonnaise side down. Butter outside of reuben sandwich lightly with soft butter or margarine and toast on a griddle or grill, turning to brown evenly
Thousand Island Dressing:
cup mayonnaise
1/2 cup chili sauce or ketchup
2 tablespoons chopped pimiento-stuffed olives
2 tablespoons finely chopped green bell pepper
1 tablespoon chopped onion
1 teaspoon minced pimiento
PREPARATION:
Blend all ingredients well and refrigerate. Makes 2 cups of Thousand Island salad dressing.

Thousand Island dressing is a popular spread -- but I like my Reubens just plain. The sauerkraut, corned beef, swiss cheese and rye bread complement each other so well.

Although Thousand Island Dressing is a typical choice, the original Reuben had Russian Dressing. Thousand Island might be a little sweet for some taste buds, and, in that case, you can try the Russian. I prefer mine with a good mustard and a little cole slaw as well.

1,000 Island Dressing is the traditional spread on a Rueben Sandwich.
I usually use mustard instead, though. The mustard had nearly no fat while the dressing has a high fat content.
I know that technically makes it something other than a rueben, but it's pretty close.
