Fry up a pack of bacon that has been chopped into an iron skillet then remove it from the drippings. Add a large spoonful of Crisco and heat it at medium high. Add your cubed potatoes and stir to coat. Brown them slightly then add a chopped onion and a chopped green pepper along with the reserved bacon and season with salt and pepper. Cover with a lid and let them steam about 10 minutes, stirring occasionally but very carefully so you don't make them mushy. Take the lid off and brown them well. Drain well on paper towels. Serve with Heinz ketchup on the side. Will clog your arteries but they are delicious! We fry our vegetables in bacon grease down here in Alabama which is why we are great cooks. PS Never trust a skinny cook for a great recipe.

If using butter to fry in, I think they need to have a certain amount of pre-cooking. I boil potatoes until they are almost done and then drain and cool them. Slice or dice them as you want. You can then finish them in melted butter. I like to use salt, pepper and garlic powder. While cooking, I sprinkle them with paprika to add to the color. Keep flipping them to avoid burning.

You're OK on the potatoes, then add onions, red and green peppers, saute in butter, sprinkle with garlic powder,& paprika. Salt and pepper.

You are on the right track. Take butter 5 tablespoons(melted), brownsugar(2 tablespoon), salt (a pinch) and mix them together. Dip your potatoes in them let them sit 10 minutes and fry. Or you can do the opposite fry then apply mix, if you apply the mix afterwards it will be like a brownsugar glaze....happy cooking!!!!

if you used butter only to cook potatoes it would burn before your potatoes would be done coz of its low smoking point. if you add a little oil to your butter, it won't burn but you stil get the butter flavour.
