Coriander is a mild antiseptic, and there is evidence to suggest that it can, to a point, stop meat going bad. It can also be used to treat upset stomachs, amongst various other things. I also read somewhere that it could be used as an aphrodisiac!

(note - I wouldn't recommend testing whether it stops meat going bad!)

Coriander and other herbs add flavor to a dish which can help you reduce salt. I guess you can say that's an indirect benefit.

Adds more fiber to the dish and a little more vitamins.

However, you really don't use a lot in a dish so you don't see a great jump in health benefits due to it's use.

I would think a vegetable soup made with tofu would be an option or maybe soy crumbles or chopped up veggie burger. Beans and lentils are high in protein, but also high in carbs. If you google vegetable tofu soup recipe you will find a number of recipes to use.
