vinegar does not absorb fat and has never been said to do so. dieters use vinegar to help reduce the effects of a high carbohydrate meal. when you consume vinegar with a high carb meal the glycemic response of the meal is reduce or the rate at which blood sugar increases. this causes a decrease in insulin secretion which decreases the potential for fat storage.

Myth!!! If it were true every woman between the age of 16 and 60 would be walking around with vinegar breath. lol

I don't think it actually "absorbs" fat, but it is good for you and should always be used on salads rather than those fatty, calorie packed salad dressings
