banana = 1 egg in cakes.
Ener-G Egg Replacer - follow directions on box.
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1

Just use the one egg I don't think it will make that much of a difference. I had a recipe that called for 3, only had 2 and it was fine

That's going to be a little difficult because one of the purposes of the eggs is to add fluffiness and "rise" to your baked product. Perhaps increase the amount of baking powder or baking soda to help with the leavening process, so that the baked cookies don't turn out all dry and flat.

Just cut the recipe in half. You won't have as many cookies but you will have all the ingredients that you need.
